Made these with brown sugar instead of splenda. Very moist and delicious. Made 12 large muffins.
Love this recipe; but I made the following modifications for higher fiber and more flavor:

Used Kashi Go Lean in blender instead of Oatmeal->Oat flour.
added 1/4c Flaxseed meal
Use low fat vanilla soy milk instead of non fat
Use liquid egg whites instead of egg beaters.
These are the best pumpkin muffins I've ever had! I've made them several times already. I double the recipe and make 12 in total - I like BIG muffins. I've calculated the calories and fat for the batch I make and its only 2 Weight Watcher points per muffin! Yummy!
I love them :-) They are pretty good sized especially for how low calorie they are! I didn't have any pumpkin spice on hand so I used a little nutmeg and they still turned out pretty good!
