Nutrition & Calorie Comments  

Pretty good. I used water and soup base ( chicken flavored) insted of stock, also added red pepper flakes, oregano and lowry's season salt. It was pretty good, I would add chicken and next time for extra protein.
Using the ingredients listed it tasted a bit bland. So I zipped it up with a package of low sodium Taco seasoning and onion powder and garlic powder to taste. It was much better.
To make this more low carb, I would exchange the Potatoes with Cauliflower.
Would rather have a lower carb soup (also spicier )
I haven't made this, but I can see why others didn't give it a very good rating. I would add a can of Ro-tel chopped tomatoes and green chilies, extra cumin and chili powder, plus a couple of strips of crumbled crisp bacon. None of these additions will increase calories appreciatively
