I've made this several times & absolutely love it. Great way to get protein. I love spinach but I can't have it because I'm hypothyroid so I sub lots of squash,zuccini, mushroom, green beans and carrots. I even added Nopal (cactus pad) to the soup. I also use real chicken instead of canned. Yummy TY
