Very hearty vegetarian dish! I halved the recipe & ended up with 4 servings; used diced tomatoes incl juice since the amt of liquid in the recipe seemed small. Rice took twice as long to cook. Next time I might add more mushrooms & chickpeas. Goes well w/ some greek yogurt or low-fat sour cream.
