Ingredients

Olive Oil, .25 cup
Onions, raw, 1 cup, chopped
Cilantro, 1 bunch, stalks and leaves separated
Jalapeno Peppers, 1 pepper
Cauliflower, raw, 1 head, large (6-7" dia)
Potato, raw, 1 large (3" to 4-1/4" dia.)
Tomatoes, red, ripe, canned, with green chilies, 1 can
Ginger Root, 4 tsp grated
Garlic, 3 cloves chopped
Cumin seed, 1 tbsp
Turmeric, ground, 2 tsp
Salt, 2 tsp
Garam Masala, 2 tsp
Directions
Heat oil in saucepan, add onion, and 1 tab. cumin seeds. Stir together; cook until onions are creamy and golden.
Add chopped cilantro stalks, turmeric, salt and chopped jalapeno. Stir in tomatoes, ginger and garlic. Add potatoes, and cauliflower, plus 2 tabs. water.
Cover and cook until potatoes are done about 20 min., add 2 tsp. garam masala, and stir. Sprinkle with cilantro leaves, turn off heat, cover, and let stand 30 min.

This was pretty good even though I made some substitutes. I didn't have cilantro so I used parsley. I didn't have garam masala so I added a few tablespoons of tomato paste with Tandoori mix. I also added sweet potatoes. It needed salt & I kinda went overboard on the green chili, but it was yummy. - 5/19/13
