Introduction

Number of Servings: 4

Ingredients

    1/2 lb ground bison (or very lean beef)
    1/2 lb shreaded potato
    1/4 cup ketchup
    1 large egg
    1 tsp onion powder

Directions

Pre-heat oven to 350 degrees.
Mix all ingredients in a medium bowl (I use my hands).
Place a sheet of foil on a cookie sheet, turn up the sides to catch any drippings.
Place meat mixture onto foil, shape into a loaf shape, but flatter (faster cooking time).
Put in the oven for 30 minutes or until meat is cooked through.

    Very good, next time I might add a little extra meat. I also had to cook mine longer but I think it was because I put it in a meat loaf pan not on a cookie sheet. - 7/20/08

    It definitely needs "something". I replaced a bit of the ketchup with barbecue sauce, & that helped. I think I'll try A1 sauce the next time. I used very lean hamburger since bison isn't readily available in Upstate NY! - 9/27/07
