Introduction

Ingredients

    IN MIXING BOWL PLACE:
    * 1 3/4 cups Whole Wheat Flour
    * 3/4 cup Cocoa Powder, unsweetened
    * 1 1/2 tsp. Baking Soda
    * 2 large Eggs
    * 1/2 cup Canola Oil
    * 2 cups Granulated Sugar
    * 1 1/2 tsp. Baking Powder
    * 1 tsp. Salt
    * 1 cup Milk, 1%
    * 1 tbsp. Vanilla Extract

Directions

1. Mix all together in a large mixing bowl for two minutes, then add one cup boiling water.
2. Divide batter amongst 12 'jumbo muffin cups' (two pans of six cups) which have been greased or sprayed with non-stick spray.
3. Bake at 350 F for about 20 minues, or until done.
4. Invert onto wire rack to cool, and store in an air-tight container after cooling for a while.
5. Enjoy! Good with milk poured over top (better for you), or served with ice cream (worse for you - LOL!) :)

    I used 1/2 c. Egg Beaters instead of the eggs, 1/2 c. unsweetened applesauce instead of the oil, nonfat milk instead of 1% and they turned out great! I also portioned them into regular size muffins for a total of 18, making one fit into my healthy eating habits easier. Moist and delicious! - 1/22/08

    Great basic recipe! Thanks for sharing it! I made the following changes &cut calories in half,fat by 9 g,cholesterol in half,&got carbs down to 35.9:
    unsweet applesauce in place of oil
    1 egg and 1 egg white in place of 2 eggs
    1 c brown sugar in place of 2 c sugar
    nonfat milk in place of 1%

    I followed the recipe as is. The batter definitely ends up more as a cake batter than a muffin batter, but they turn out wonderfully moist. They taste very good, especially considering the very low saturated fat content. Wil definitely be making these again! - 5/21/08

    these muffins stuck horribly. I followed the recipe except that i used reduced calorie sugar...I sprayed muffin tins with pam extremely well and they all stuck !!! ARG - 2/27/10

    My batter was quite runny so I added another half cup of whole wheat flour and a quarter cup cocoa. I used hershey's dark cocoa and they sure have the ability to get rid of that chocolate craving!! I only have one large muffin pan so I made a dozen regular muffins and 6 large muffins!!YUUUUUMMMMYYY! - 2/16/09

    Not sure what I did wrong with these... I put 1/2 into a 6 muffin jumbo muffin pan and the rest into a regular sized muffin tin. I sprayed. Oth with nonstick spray before filling. The muffins in the jumbo pan came out perftect, the regular sized stuck horribly and fell apart. They taste great tho - 3/30/12

    wow these did not work for me. They didn't puff up, had to be scraped out of the muffin pan, and didn't taste good. I threw the whole batch away and was not happy about wasting ALOT of ingredients. - 10/27/10
