Assemble this dish and refrigerate 8 hrs or overnight before baking.

in the summer we cook a lot of dutch oven - it's outside! This was an experiment on lasagna to see how it would be with chicken and cooked in the dutch oven.

What do you do if you have chicken waiting to be grilled but no good fixins' to fix it with ? Make a quick veggie filled lasagna !

Over the weekend I was in a cooking conundrum.. unexpected warm weather was making me want to grill something, but the need/want for some comfort food led me to want something like lasagna.. but wanting to make sure I got the veggy fix in for a "cheat full" weekend of fun food out... this was the compromise that totally hit the spot.

You could totally omit the chicken - however it did give the lasagna a summery taste.. maybe grill the zucchini and the leeks instead !

This is my version of a meat lover's lasagna with no egg or ricotta cheese. Serve it with a simple tossed salad and you'll be all set. I don't make it too often, but when I do...mmm, mmm, good!

Lasagna made with whole wheat noodles & cooked in the crockpot.

Use any ground meat you like in this recipe.

Low carb/High protein lasagna

A vegetable filled lasagna with a little less calories

Sweep the icebox for your leftovers and make a casserole of vegetables with the last of the baked chicken. You can vary any and all of the ingredients.

In my version of lasagna I've substituted Chicken sausage, which is lower in fat and calories, for the Italian sausage. Really yummy! I buy this sausage at Sam's club. You may also be able to find at your local butcher/meat dept.

You can cook the sauce as long as you like to distribute the seasonings and flavor. But my family usually can't wait for me to cook it down all day, so my version has less water and cooks up fast! If you choose to cook your sauce longer, you may need to add additional water.

The original recipe for this was about 478 calories!! I just let you have desert!

Tastes even better the next day!
