Ingredients

    Two 20-oz packages Jennie-O Extra Lean Ground Turkey (or equivalent), 2 eggs, 1 c. oats, 1 onion, 2 jalapenos, 4 c. spinach (washed), Worchestershire sauce, chili pepper powder, cayenne pepper, garlic, salt-free seasoning blend (I used Mrs. Dash, but anything savory will work)

Directions

Preheat oven to 350 and spray an 8x10 Pyrex baking dish with Pam. Dice onion and jalapeno peppers, chop spinach finely; combine with ground turkey in a large bowl. Add oats, eggs and spices (don't be afraid to add a lot of seasoning!). Place mixture in dish and bake for 45 min until turkey is cooked all the way through. Cut into 8 pieces and enjoy!

    My husband and I loved this recipe, however I did add a few things. We like things spicy so I added more hot peppers. I also added crushed organic blue tortilla chips, vegan cheddar cheese (keeps the fat and calories down), all natural salsa. I put these things on top... It was awesome! - 11/4/10

    This was amazing. I was weirded out by the oats upon reading the ingredients, but they blended really well and didn't change the texture at all. We will be making this alot! - 4/28/10

    wow the best meatloaf I've ever made..very spicy..i think my jalepenos were extra hot...may have to use just one..i also used crackers instead of oats...next time i will use oats..once again WOW - 2/26/11

    Made this tonight. My 7-year-old son, the world's pickiest eater, ate it all...and it was full of spinach and he never noticed! I used steel cut oats and it was great, couldn't even tell they were in there. I only used one jalapeno, but everything else was the same. - 5/11/10

    I just love this with the turkey and the consistancy! I must admit I am going to make the "lean beef" version tonight with onion, and top mine with 3 rows of catchup before cooking. A little more traditional for my beef eating man.
