Ingredients

    6 ounces uncooked multi-grain spaghetti
    1 Tbl. olive oil spread (or butter)
    1/3 cup shredded Parmesan cheese (can use nonfat for less calories)
    1 (26 oz.) jar meatless spaghetti sauce (I used Classico fire roasted tomato & garlic @ 50 cal / 1/2 cup serving)
    1 (12 oz.) bag Morningstar Farms Grillers Recipe Crumbles


    2 cups chopped green pepper
    1 (14.5 oz.) can diced tomatoes, drained (I used Hunt's Organic basil oregano @ 20 cal / 1/2 cup)
    8 oz. nonfat cottage cheese
    1 (8 oz.) can mushrooms, chopped
    1 small onion, chopped
    2 cups shredded part-skim mozzarella cheese (I used Kraft Pizza cheese - mozzarella & cheddar)


    (Use whatever spices you want. I used extra oregano, but the others were already in the sauce and tomatoes).


    3 garlic cloves, minced (optional)
    1 Tbl basil or 12 fresh basil leaves, chopped (optional)
    1/2 tsp dried oregano (optional)

Directions

Makes 12 servings.
Preheat oven to 350 degrees F.
Spray a 13 x 9 x 2 baking dish with cooking spray.

May make ahead and freeze or refrigerate, then thaw before cooking.

1. Cook spaghetti according to package directions; drain & pour into bowl. Add olive oil spread and Parmesan cheese; toss to coat.

2. In a nonstick pan, spray a small amount of cooking spray and saute the onion and pepper. Add Morningstar Farm Crumbles, spaghetti sauce, tomatoes, mushrooms, and seasonings. Heat throughout.

3. Stir in cottage cheese and cooked spaghetti. Add 1-1/2 cups shredded cheese. Pour into greased 13 x 9 x 2 baking dish. Sprinkle with remaining cheese, cover & bake at 350 degrees F. for about 40 minutes or until heated through.

    My whole family loved it. It was like eating lasagna but with spaghetti noodles instead. We ate it with a side salad and low calorie Texas toast and it was delicious. Thanks for the receipe!!! - 4/11/08

    So delicious - used spelt pasta and instead of canned mushrooms used 8 oz of sliced baby portabellas. I also used Rao's marinara sauce. I'm glad it makes so much!! - 2/18/08

    This was delicious!!! I didn't have mushrooms, and they would've made it even better! My kids LOVED it!! They said to make it every day! I didn't even tell them that it wasn't "real" meat! This will be a weekly thing at my house for sure! - 12/31/07

    I omitted the green peppers and added fresh garlic. This was a great meal. You end up with a ton of food though, so if you're single like me, expect to have leftovers for a week! - 9/26/07

    This was so good! It tasted like it should be bad for you but it's not. I loved it! I served it to a die hard meat fan and he loved it as well. I didn't say it was vegetarian until he was finished eating of course. - 8/23/07

    This was the first time I made anything with Morningstar Crumbles. The smell was a little strange, but after it cooked it wasn't as strong. There was still a tiny hint of the strange flavor, but not enough to tip off my father (who wasn't aware that it wasn't real meat). This recipe makes a lot! - 1/5/10

    there is an italian meal I grew up with...
    called baked spaghetti..
    it has all the ingredients as baked ziti..
    only made with spaghetti..
    it is similiar to this recipe...only no bread crumbles on top....and ricotta not cottage...
    same as baked ziti...
    this must be really good...
