Introduction

Sweet and sour like taste with a nice hint of heat. This is a great throw together meal when your looking for something a little different. Ingredients

    2 small chicken breast halves (about 8 ounces), cut into bite sized pieces
    1 T Olive Oil
    2 cups cooked brown rice
    2 T Low sodium Soy Sauce
    3T Chinese 5 Spice sauce (I use Trader Joes brand)
    1/4 t garlic powder
    1/4 t ground ginger
    1/4 t red pepper flakes, if desired
    1 cup frozen peas, thawed
    1 cup canned pinapple chunks or tidbits, drained

Directions

Heat oil in medium skillet
Add chicken and cook over medium heat until cooked through and juices run clear.
Add Brown rice, spices, 5 spice and soy sauce, and peas, heat for 2-4 mins.
Add pinapple and allow to heat through.

    This was DELICIOUS! Easy to modify...I doubled everything and used boneless/skinless chicken thighs. No 5-Spice or Pinapple, Broccoli instead of and 2 dashes of Cinnamon. Used Lower Sodium Soy Sauce...it's all I had and it made 4
    1-1/2 cup servings at 279 Calories per serving:) YUMMY!!

    I loved it and thought it was delicious. Unfortunately no one else in my home would eat it. That's two out of three people wanted something else to eat; even a can of soup was better to them. Picky eaters. - 2/3/15
