Angel Food cake tastes better when Almond Extract is used instead of Vanilla Extract. Just a suggestion... And I'm guessing the Author intended to say UNGREASED pan, especially if she has made the cake before : ) - 9/5/08

I make mine with the boxed angel food cake mix (dry only) and 1 can crushed pineapples. Nothing else. It's so delicious, especially with light Cool Whip. - 5/7/08

Step 2 might say:Beat egg whites until soft peaks form.Reduce mixing speed and gradually add remaining 3/4 cups sugar, salt, and cream of tartar, several Tbsps. at a time.Add extract, lemon juice, and water, and beat until stiff, but not dry peaks form.Egg whites peak best before mixing w/other ingredients - 9/5/08

Just repeating what has already been said....Do not Ever grease an Angel Food pan...the cake has to crawl up the side to rise.......If you do it will not rise and will just lay in the bottom.......I know this FOR SURE LOL - 9/5/08

I used splenda in place of the sugar and I heard that you can also use sunsweetened applesauce to replace the sugar, it makes it very moist.. Great for anyone who is avoiding sugar either do to diabeties or dietary reasons. - 9/5/08

When I was small, my Mom would cut the angel food cake into slices and toast them in the toaster. Yum! - 9/5/08

This is a good cake, but if you want a little more flavor, I make the cake, then cut it in half & layer it with no fat whipped cream and strawberries covered with strawberry glaze non fat. That makes it have a little more taste to it and comes out great. My granny is a diabetice and she loves it! - 6/4/08

I have made angel foods from scratch for years and appreciate the comments given. When I was in 4H as a girl I demonstrated what happens when you do grease the pan. The cake flattens and becomes rubbery. My demo included a cake mixed wrong and one correctly mixed. Thanks for the recipe!! - 8/26/10

Recently diagnosed w/Type II Diabetes. I make this cake w/sugar substitute and added crushed pineapple. I drained and rinsed the pineapple well since it was packed in heavy syrup. These changes cut down on the sugars and calories for this cake. It was nummy! - 6/29/08

Use and angel food cake pan, or a bundt pan works as well, but an angel food pan with removable bottom (or top depending on where you're from) is best. DO NOT GREASE PAN and make sure completely cool before trying to remove. - 4/4/08

Great taste! BUT--if you've never made an Angel Food Cake, you don't know that the recipe is wrong about greasing the pan. That causes it to slide out of the upturned pan before it's cool, and then it falls. My mother in law is an angel food expert--do not grease, coll before removing - 3/8/08

I make Angel food cake alot. I liked the hint about apple sauce, I think I'm going to try. Some of you asked about cake pans - I've made cupcakes, mini bread loaf cakes and I use cake pans all the time. Just make sure they are REALLY clean and place a parchment paper on the bottom of the cake pan. - 5/21/12

I am going to try this, I am not sure how a diabetic can eat this either. I am going to use Stevia in place of the sugar and then a diabetic really could eat it. I would also add fresh strawberries. - 6/17/08

    O.K.
This cake came out OK but it was the smallest cake I've ever seen in the world. Wanted to serve at a brunch but turned out to be only for me and my boyfriend because I was embarrassed to bring it out because it was so small. :( - 6/2/08
