Ingredients

    2 fillets cod (tilapia if available..)
    3 tbsp baja chipotle marinade (or 3 tbsp raspberry chipotle marinade if available)
    2 tbsp extra light olive oil
    2 tbsp balsamic vinegar
    5 tbsp cilantro, chopped
    1 cup fresh cabbage, shredded
    Red Ripe Tomato, 1 cup diced
    4 medium-sized corn tortillas (approx 6" dia)
    Salt & Pepper, dash

Directions

Saute fillets with 1 tsp extra light olive oil and 2 tsp of chipotle marinade.
Wrap in foil and bake at 350 degrees for 40 minutes.
Shred with fork when done. (Alternative cooking method - put foiled wrapped fillets in bar-b-que pit; cooked until done.)
Garnish mix- - in a bowl add shredded cabbage, cilantro, diced tomato, 1 tbsp of chipotle marinande, lime juice, and balsamic vinegar.
Give ingredients a light toss.
Heat tortillas; add fish, top with garnish; salt and pepper to taste.

    This was really good. The directions were unclear, so I guessed what it meant in regards to the 3 TBLSP of Chipotle Marinade and I only saw SOME of it being used. - 4/15/13
