Ingredients

    5 medium potatoes
    1 leek
    Dash of black pepper
    4 cups of vegetable broth
    1 tbsp olive oil

Directions

Heat oil and add leek (finely chopped).
Add potatoes (finely chopped).
Cook until softened.
Add stock.
Simmer for 20 mins.
Add pepper to taste.

    I made this soup but added garlic and onion plus 1 tbs. of cornstarch to thicken. Excellent soup with a sandwich. - 4/19/08

    Yummy quick soup. I left skins on potatoes, let the soup simmer for about an hour and used a potato masher to break up the potatoes a bit to thicken the broth. I am normally used to a heavy cream (FAT) based potato soup but this one I can definitely do! Very filling without weighing you down. - 12/4/11

    Very easy to put together. I wish I would have added chopped celery with the leeks. I did add celery seed, garlic powder and red pepper flakes. I also mashed the potatoes so it would thicken. - 1/20/21

    I didnt use the olive oil at all- just throw in the potatoes,finely chopped leek and chicken broth in a soup pot then simmer. I also put a couple of bay leaves-salt and pepper to taste. - 9/2/10

    I made this today but added mushrooms. I used a low sodium broth, therefore it lacked the flavor it would have had if it was made with the broth you suggested. I just need to adjust my taste buds. - 7/7/09

    This looks delicious and easy to make. Leeks are a oniony,so don't think I'd add the onions others are. BUT I'd like to try a cup of fat-free half & half along with 2 cups of vegetable broth for the stock. - 4/20/08
