Ingredients

    1 cup green beans, finely chopped
    2 cups cauliflower, finely chopped
    1 cup carrots, finely chopped
    2 medium onions, finely chopped
    2 medium potatoes, boiled , peeled, and mashed
    1/2 cup green peas(fresh or frozen)
    2 medium tomatoes, finely chopped
    1 tbsp ginger paste
    1 tbsp garlic paste
    1-1/2 tbsp Pav Bhaji Masala
    (you can find this masala in Indian grocery stores)
    Between 1/2 and 1 tsp chili powder
    2 tbsp canola oil
    lime wedges for garnish
    cilantro for garnish


Directions

Pressure cook green beans, cauliflower, carrots, and peas with 1 cup water and 1 tsp salt.
Mash the vegetables and mix in the mashed potatoes. Do not grind it into paste. The mixture should be coarse
On medium heat, heat oil in a pan. Add 1/2 of the chopped onions (reserve other half for garnish), ginger and garlic and saute' until soft and translucent.
Add tomatoes, chili powder, and Pavbhaji masala and saute' for 4-5 min.
Add vegetable mixture and saute' for 2 min.
Add some water to make the consistency like chili or thick soup. Adjust salt to taste.
Increase the heat to high, bring to boil, then lower the heat to low and simmer for 15-20 min.
Serve in a bowl topped with some onions, cilantro leaves and lemon wedges.
Serve along with toasted dinner rolls or burger buns.

    This is a clean your fridge recipe. The key is VARIETY. If you don't have a veggie or have a different veggie, toss it in. Most of the flavor is in the onion and masala anyway. It doesn't have much protein, so you'll want to drink some chaas or have some type of daal with it. - 8/5/09

    For those of you who have trouble finding Masala spice try using curry and coriander.
    There is also a mix available in the powder gravy section called Indian Chicken, it has Masala in it.
    I also live in a small town and totally appreciate wonderful new recip

    I made it a 2nd time last night, and used yams for the potatos, and added chopped up bonless skinless chicken to make a complete meal. I also doubled the spices, as we like spicy food. This is a new favorite at my house. - 3/28/08

    This is one great way to eat lots of veggies and, build on your fiber intake. Eating spicy (hot to the tongue) makes you lose more weight as per Spark's article. Thanks for the recipe. I have tasted this in the restaurants, now I will make it. Yum! - 10/13/07

    YES!! This was delicious and filling - used sweet potatoes - because I had them in the veggie basket. I see that any vegetables would be good - love veggies and always have lots to hand. Made it quite hot and topped with cucumber raita. YUM-YUM-YUM !!! - 5/25/10

    I use Badshah brand pavbhaji masala available in any Indian grocery stores. Also I add green onions if have them fresh, eggplant and some paneer to make it a whole meal
