Ingredients

    3 large summer squash, sliced
    1/2 cup fat free sour cream
    1 cup water chestnuts, sliced
    1/4 cup pimentos, drained
    1 small can cream of chicken soup, condensed and fat free
    1 cup plain croutons

Directions

In a large pot, cook the summer squash until tender. Drain.
Using a medium baking dish, line the bottom with croutons, saving about 1/4 cup for the top of the casserole.
In a large bowl, combine the cooked squash, sour cream, water chestnuts, pimentos and chicken soup. Mix until squash is covered.
Pour over croutons. Crush remaining croutons and sprinkle over casserole.
Bake at 350*F for 30 minutes.

    Mine ended up a little too creamy, I think next time I won't add the entire can of soup. I did add a can of chicken breast to increase the protein and I liked this addition. - 4/8/10

    I really didn't like this dish. But I can't fault the recipe, I just am not a fan of fat-free products. I thought the combination of things would make for a "mask" of he fat-free stuff, but it just didn't. - 5/6/08

    When I make this for my best friend as a "luncheon" casserole, I add 3/4 of a cup of grated reduced fat cheddar or mexican blend cheese. YUMMO! - 11/4/13

    This is great!. Even my kids who don't usually like squash liked it. I left out the water chestnuts and pimentos because I didn't have them on hand, and it was still very good. - 8/1/07
