Introduction

Number of Servings: 8

Ingredients

    2 tbsp olive oil
    1 pound fully cooked smoked sausage, cut bite size pieces
    1/2 large onion
    1/2 cup red bell pepper
    4 garlic cloves, chopped
    2 cans of red kidney beans
    1 cup low salt, 99% fat free chicken broth
    1 tsp creole seasoning

Directions

Makes 8 servings of 3/4 cup each. Serve with rice.

Heat olive oil in large skillet over medium heat. Add sausage, onion, pepper, and garlic and saute until onion is brown; about 15 minutes. Mix in kidney beans with their juices, broth and Creole seasoning. Reduce heat to medium-low; cover and simmer until flavors are blended and mixture is very thick, stirring occasionally, about 45 minutes.

Spoon mixture over cooked rice or for a lower carb option, eat as is.

    i threw all the ingredients in the crock pot minus the oil and added a full can of chicken broth and chopped fresh mushrooms it was amazing very flavor full. uncover it for about an hr before serving and any extra liquid will evaporate. u can turn up the heat to speed up the process - 9/19/10

    Just a suggestion: You actually COULD make a lower fat version of this by subsituting the smoked sausage for turkey smoked sausage and using brown rice. Would also go great with lowfat cornbread. Yum! - 8/31/10
