Introduction

These cool and creamy little bites make a delicious, healthy dessert. These cool and creamy little bites make a delicious, healthy dessert.
Number of Servings: 12

Ingredients

    Crust:
    Barhi Dates - 0.5 cup (80 grams)
    old-fashioned rolled oats - 2 Tbs.
    Almonds - 10 grams
    Unsweetened Coconut, Reduced Fat - 2 tbsp
    Cinnamon, ground - .5 tsp
    Nutmeg, ground - .25 tsp

    Filling:
    Banana, peeled and frozen - 200 grams
    Strawberries, frozen - 80 grams
    Almond Breeze, Vanilla Unsweetened, Almond Milk - .5 cup
    Cinnamon, ground - .5 tsp
    Vanilla extract - 1 tsp
    Coconut extract - 1 tsp (optional)

Directions

Put all crust ingredients into a small food processor. Pulse until well blended.

Press 1 tsp of crust mix into each well of a 24 count muffin pan (or do 2 tsp in each well of a 12 count muffin pan). To make removal easier, you can line with parchment paper, plastic wrap, tin foil, etc. Put into freeze to firm up a bit.

Add all filling ingredients into a blender - holding back 2 tbs of milk for now. Mix until creamy and well blended. If you need more liquid, add the additional milk.

Spoon filling over the crusts and smooth with spoon. Put back into freezer for final chill. Leave in freezer until the ice cream filling is firm and well frozen. Let sit room temp for only 2-3 minute or so to slightly soften the filling, then eat.

Makes 12 servings.
2 pieces per serving if you make 24 mini tartlets or 1 piece if using a larger tin.
