Ingredients

3/4 cup dry lentils
3/4 cup dry brown rice
4 cups water
4 chicken or vegetable bouillon cubes
2 teaspoons chili powder
1/2 teaspoon cumin
1 teaspoon onion powder
1/4 teaspoon garlic powder
1 Tbsp olive oil
Directions
In a 2-quart saucepan bring the water to a boil. As the water is heating, add the oil, lentils, rice, bouillon, chili powder, cumin, onion powder, and garlic powder. Bring the whole thing to a nice fat boil. Reduce the heat to low. Place a lid on the lentils and allow the mixture to simmer for about 45 to 50 minutes. The water should be mostly absorbed. You may serve this as is, or topped with a little cheddar cheese if desired.
* If you are having a busy day and don't have time to cook this on the stove, it can cook in the crock pot on low for about 6 to 8 hours or high for 3 hours instead.

Really delicious. Even my son (6) ate 2. I did tweak it up. Filled Tortillas with mix , added some shredded cheddar, rolled them up, placed them in a casserole dish, poured Enchilada sauce over the top and sprinkled some more cheese, covered with foil and baked it for about 30 minutes. I've never had a lentil in my life, so decided to try this recipe--it was wonderful! My family really enjoyed it. I served it on a whole-wheat tortilla, with low-fat cheddar cheese, fat-free sour cream and salsa. Delicious!! I will certainly try more of your lentil recipes. - 2/25/09

Aren't lentils good?! I'm so glad you enjoyed the recipe. I too, had never had a lentil until a couple of years ago when I decided to find low cost recipes for my family budget. Lentils are extremely cheap, easy to cook with, healthy and delicious!

Very tasty! My first introduction to TVP, although we eat lentils frequently. Although the portion appears huge for one serving, I really appreciate that the recipe is for one as sometimes I am the only one in the house eating Sparkfood and get tired of eating the same thing 8 times in four days! - 9/8/11

So very good - I followed the directions pretty well, adding a bit of cilantro and lime juice as a 'dressing' once I made my tacos. I also added the cumin, garlic powder and onion powder an hour before I was going to eat (I made mine in the crockpot). I am so happy I have leftovers! So good! - 6/11/10

I like this recipe. I'm not much of a bean eater, but I added this into my regular taco mix, left out some of the meat and it does well. Best of all I get added fiber. I'll have to try it when I just make a taco salad as see how well it does. I;ll be sharing this with my family and friends. - 10/5/09

I cooked this last night and put it on some toasted flour tortillas and topped them with a little low fat mexican cheese blend, chopped tomatoes and onions. It was very good! I portioned it out and am keeping in the freezer for a dinner next week. I did it in the crock pot and it was simple! - 7/21/09

I made this last week and I will defnitely make it again! It was remarkable! I couldn't believe that it was vegetarian! I could've sworn I was eating taco filing! I left out the cumin/oil/boullion (didn't have) but it was fab! Chili powder is my new fave spice. Great first time eating lentils! - 6/27/09
