Ingredients

    3/4 cup dry lentils
    3/4 cup dry brown rice
    4 cups water
    4 chicken or vegetable bouillon cubes
    2 teaspoons chili powder
    1/2 teaspoon cumin
    1 teaspoon onion powder
    1/4 teaspoon garlic powder
    1 Tbsp olive oil

Directions

In a 2-quart saucepan bring the water to a boil. As the water is heating, add the oil, lentils, rice, bouillon, chili powder, cumin, onion powder, and garlic powder. Bring the whole thing to a nice fat boil. Reduce the heat to low. Place a lid on the lentils and allow the mixture to simmer for about 45 to 50 minutes. The water should be mostly absorbed. You may serve this as is, or topped with a little cheddar cheese if desired.

* If you are having a busy day and don't have time to cook this on the stove, it can cook in the crock pot on low for about 6 to 8 hours or high for 3 hours instead.

    Really good and simply! My only suggestion would be to hold off on putting the cumin, onion powder and garlic in. Letting the spices simmer for almost an hour dulls their flavors. If you put them in right before the rice and lentils are done, their flavors are at their peak! - 3/15/10

    Really delicious. Even my son (6) ate 2. I did tweak it up. Filled Tortillas with mix , added some shredded cheddar, rolled them up, placed them in a casserole dish, poured Enchilada sauce over the top and sprinkled some more cheese, covered with foil and baked it for about 30 minutes.     I've never had a lentil in my life, so decided to try this recipe--it was wonderful! My family really enjoyed it. I served it on a whole-wheat tortilla, with low-fat cheddar cheese, fat-free sour cream and salsa. Delicious!! I will certainly try more of your lentil recipes. - 2/25/09

    Aren't lentils good?! I'm so glad you enjoyed the recipe. I too, had never had a lentil until a couple of years ago when I decided to find low cost recipes for my family budget. Lentils are extremely cheap, easy to cook with, healthy and delicious!

    Very good. I added chopped onion and green pepper which were sauteed before adding the stock, rice and lentils. I also used taco seasoning mix plus garlic and onion powders instead of the cumin and chili powders. Easy meat free meal. - 5/19/13

    Very tasty! My first introduction to TVP, although we eat lentils frequently.     So very good - I followed the directions pretty well, adding a bit of cilantro and lime juice as a 'dressing' once I made my tacos.     I like this recipe. I'm not much of a bean eater, but I added this into my regular taco mix, left out some of the meat and it does well. Best of all I get added fiber.     I cooked this last night and put it on some toasted flour tortillas and topped them with a little low fat mexican cheese blend, chopped tomatoes and onions. It was very good!
