Ingredients

1 pound ground turkey
1 1.25-ounce package taco seasoning mix
1 15-ounce can Mexican style Stewed Tomatoes
1 15-ounce can black beans
1 15-ounce can whole kernal corn
1 5.5-ounce can V-8 or tomato juice
Directions
Brown the turkey in a large skillet and drain off any extra fat.
Place the turkey in a 3 1/2-4 quart slow cooker.
Add all other ingredients. Do not drain the beans, tomatoes or corn. Stir.
Allow to cook for 2-3 hours on high or 4-6 hours on low.
Makes about 8 1-cup servings. Yummy when topped with tortilla chips, low-fat sour cream, sliced green onions, japaleno or grated cheese.

This is delicious!!! I used a 1.25lb package of 99%ff jennie-o ground turkey and even added an extra can of the tomato juice also used no salt added corn and when I entered in all ingredients in the calculator, mine was less cals!!! 180cal, 1.6fat, 21g carb, fiber 4.6, protein 21.3 per 1c. serving - 12/5/09

Great flavor and super easy to assemble. I used Penzey's original taco seasoning (2 Tbl). I did not have Mexican style tomatoes, so I added chopped onion to the turkey and a small can of chopped green chilis. Also did not have tomato or V-8 juice, so I used a can of tomato sauce + 1/2 can water. - 10/21/15

Yum. I sauteed the turkey with a large chopped onion and a clove of garlic before adding to the crock. I added two red bell peppers because they needed to be used and to add more fiber. If I had cheddar I would have sprinkled that on top, but made do with some chopped chives. Will repeat this one. - 1/30/19

Fixed this tonight and we loved it. Very easy to substitute. Didn't have corn so used 2 cups frozen mixed bell peppers, thawed. Also, used kidney beans, 1 can including liquid, a 2nd w/o the liquid. Will try black beans next time. We don't like food extremely spicy so this worked out well...I only - 7/16/18
