Ingredients

    1 cup rolled Oatmeal
    1 cup Milk 1%
    1.3 cup whole wheat flour
    1/2 cup unsweetened applesauce
    2 egg whites
    4 tbsp ground flax seed
    2 tsp cinnamon
    1 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1/2 tsp nutmeg
    1 cup blueberries
    .5 cup Splenda
    1/2 cup unpacked brown sugar

Directions

Soak oatmeal in milk for at least one hour. Mix applesauce and egg whites into oatmeal mixture. Mix dry ingredients together. Add wet ingredients to dry but do not over mix or muffins will be tough. Fold in blueberries. Spray muffin tin with Pam if not using liners. Bake 20 minutes on 400 degrees.
