Introduction

Cucumbers give this guacamole a refreshing flavor while also cutting the calories in each serving. Cucumbers give this guacamole a refreshing flavor while also cutting the calories in each serving.

Ingredients

    2 ripe avocados, peeled and chopped
    1/3 medium organic* cucumber, chopped
    1/3 medium onion, chopped (I use red onion)
    1 garlic clove, minced
    1 tsp cumin powder
    1 squeeze lemon (about 1-2 Tbsp juice)
    Salt to taste (about 1/2 tsp)

Tips

*If using conventional (non-organic) cucumber, peel skin and discard as cukes sprayed with pesticides retain most of those chemicals in the peel, which should not be consumed.


Directions

Add all ingredients to blender or food processor and process to desired consistency. Add salt (about 1/2 tsp) to taste. Serve chilled. Enjoy with your favorite chips or tortillas.

    This is very similar to the low fat recipe I use. I add chopped fresh cilantro (or the paste from the tube) AND I add nonfat plain yogurt. The yogurt cuts the fat per serving and makes the guac more creamy. I add about 1/4 cup to one avocado - 1/7/09

    I never tried this but on TV, a chef was saying to blanch the avocado for 5 seconds in boiling water, then icy cold water and the avocado won't brown...worth a try!...will keep you posted! - 6/21/09

    Delicious! I didn't have any lemons so I substituted vinegar, apple juice and coriander which thankfully was a perfect substitute. This was my first time eating guacamole and I really liked it. I had homemade pita chips with it, mmmm :) - 11/7/08

    Even with lemon, the guacamole can brown - the fail-safe non browning trick is to cover with ceran wrap and PRESS the wrap right onto the top of the guacamole. I hardly ever use lemon and it never browns when I store it :) - 2/9/09

    My family and I loved this. I did add greek yogurt (fat free) as I have started adding to everything I want a little creamier, and it did the trick. I also use this as a spread for hamburgers (turkey burgers) and sandwiches instead of mayo, delicious! - 6/30/10

    I think the best way to check on serving size is to measure in a measuring cup and divide by 8. (e.g., 1/8 cup, if it makes one cup) OR 2 tablespoons full if it makes 16 tablespoons. Will definitely try this and keep you posted

    Great idea to add cukes! I also used lime juice, added in chopped tomato, cilantro, a dash or 2 or white pepper, a dash of dried oregano and used red onion and added in 2 T of fat free Greek Yogurt. YUM! With those additions I had 2 cups of guac. - 5/19/10

    I like avocado I just need to find the right one. No too many times I am lucky. Thisi recipe sounds very good I love all the ingredients.
