Ingredients

1 pkg 2 layer Spice Cake Mix
.5 Cup Water
.5 Cup Applesauce
3 Eggs
8 oz pkg of Neufchatel Cheese, softened
1 Cup canned Pumpkin
1 tsp ground Cinnamon
.5 tsp ground Ginger
6 squares Baker's semi sweet chocolate, coarsely chopped
.5 cup Cool Whip light
2 Tbsp Stevia blend for baking
Directions
Preheat over to 350
Prepare cake mix as directed on package, reducing water to .5 cup, and replacing the oil with the applesauce.
Add half of the Neuf. Cheese, the pumpkin, cinnamon, and ginger. Beat on medium speed until well blended. Stir in chopped chocolate. Pour into greased 12-cup fluted tube pan or 10-inch tube pan.
Bake for 40 to 45 minutes ort until toothpick inserted to center comes out clean. Cool 10 minutes. remove from pan, cool completely on wire rack.
Mix remaining Neuf Cheese, Cool Whip, and sugar until well blended. Spread on top of cooled cake. Cut into 16 slices.
Makes 16 servings, 1 slice each.

i've been making the original from the KRAFT website for a few yrs and its always a hit. have made some of the adaptations too - it really is still moist w/o any oil! seen a cute version w/ orange colored frosting covering the cake and a green-tinted ice-cream cone upside down on top as the stem! - 10/6/10

This is so good. I love the flavor of this cake. But I made it with natural applesauce instead of the oil.
Even my kids love it. There is only one problem. I can't stop at just one serving.... Too incredible tasty.

I know, right?! I am making it this weekend for a gathering! I can't just make it to have at home unless I KNOW there will be no left overs! I just made homemade applesauce too - so I will use that instead of the oil this time as well!

Yes - it is found right next the the Cream Cheese in the grocery store - it simply has 1/3 of the fat and has the same consistency and taste! The only downfall with this cake is trying to stay out of the left overs! Enjoy!

There is no oil in the ingredient list or in the calorie count. I'm confused with the directions - what do you do with the applesauce? This sounds really good but I'm afraid I would screw it up! - 2/15/10

You won't screw it up! The applesauce replaces the oil - so you don't NEED any oil at all... try it - you'll LOVE this cake!
