Introduction

Number of Servings: 18

Ingredients

    1 1/4 cups tapioca flour
    2 cups (8 oz bag) shredded cheese (your favorite kind--nutrition info is for reduced fat Mexican blend)
    1.5 tsp baking powder
    2 large eggs
    1/4 cup oil (or melted butter if you want it rich)
    2 tsp chives (chopped fresh or dried)
    2 tsp oregano or rosemary (other herbs might work well too--dill is good with cheddar)

Directions

Preheat oven to 450.

Mix flour, baking powder and herbs. Stir in shredded cheese until it's coated.

Beat eggs with oil in a small bowl, then pour into dry ingredients and combine with a spoon.

Form into balls. 1 inch diameter is good for party food, 2 inch for biscuits.

Place on greased baking sheets or parchment paper. Bake 8-10 minutes, until golden brown. Best served warm.
Good with a tomato sauce dip.

    Biscuit size, or 2 inch, though I find that quantities sometimes vary with humidity and with how different shredded cheeses absorb the wet ingredients.
