Introduction

Ingredients

    95 g (1/8 cup plus 2/3 cup) whole wheat flour
    110 g (1 cup) oat bran
    45 g (1/2 cup) ground flax seed
    240g (1-1/4 cups) sugar
    56g (7/8 cup) cocoa powder (1/2+1/4+1/8 cup)
    1 tsp. salt
    1-1/2 tsp. baking soda
    1 tsp. baking powder
    3 eggs
    1-2/3 cups buttermilk
    1-1/2 cups canned pumpkin
    1/8 cup oil
    1 tsp. vanilla
    1 cup Hershey's special dark chocolate chips

Directions

Preheat oven to 325 degrees. Spray 24 muffin cups with non-stick spray. In a large bowl, combine the dry ingredients. In another bowl, whisk together the wet ingredients. Stir the wet into the dry just until smooth. Add chocolate chips and stir to mix. Do not overmix. Divide batter among the muffin cups. Bake for 20-25 minutes or until just done. Do not over-bake. Makes 24 muffins.

    Yum! These are tasty, I added 1/4 cup of wheat germ to the recipie and they turned out great. Also only cooked them for about 18 mins. Thanks for sharing! - 4/1/09

    I substituted plain yogurt for the buttermilk, not too sure how much it changes the reipe but they were very good and moist and the chocolate flavor was excellent - 6/12/09
