Ingredients

    1 - 15 oz. can of Bush's Best Black Beans
    1 - 14 oz. can of Hunt's diced tomatoes
    (for less sodium use no salt added instead)
    1 - Package of Uncle Ben's Ready Whole Grain Brown Rice(90 Sec. Mirowavable Pouch)
    1 - Small Red Onion (diced)
    4-5 Garlic Gloves (sliced like almonds)
    1/2 tsp of Curry Powder

Directions

Use Pam or a little bit of Olive Oil in a sauce pan over low heat and add Red Onion, Garlic Gloves & Curry Powder. Cook on Low for a minute or two onions still need there crunch. Add rest of ingredients. Continue to cook on low for about 30 mins. Stirring every 5 mins. Keep lid on in between. Enjoy.

    This is even cheaper and perhaps better if you use dried beans instead of canned. For a fifteen ounce can of beans I would use a half cup of dried beans. I soak them in very hot water for 10-15 min instead of presoaking everynight. Replace water. Boil until tender. Can do this the night before. - 11/11/08

    I just cooked this up. Very filling and pretty good. I ended up adding quite a bit of salt though. Next time I'll add some more herbs and maybe some chicken. Very useful base recipe though! Thanks!

    Excellent!! I used cumin, chili powder and paprika (1/2 tsp. each) and tabasco instead of curry. I also sprinkled shredded 2% cheddar on top and added turkey sausage. This recipe will be a staple for me! - 1/27/08

    I'd replace the Uncle Ben's rice with good generic brown rice in a bag - you'll lose quite a bit of the sodium. And if you really want to do a little extra work, going without a can for the black beans would do the same. - 7/24/11

    This is a good base recipe. I used dried black beans w/overnite soak. I cook them in low sodium chicken broth w/sauteed carrots, celery, onions, green and red bell pepper. I used oegano my favorite seasoning.

    I added a few more spices to kick it up some. My husband suggested mixing in some taco meat and rolling these up in whole wheat tortillas for a great filling meal. - 7/9/08

    This is a great base recipe. You you might want to check the ingredients on the canned goods. I've stopped buying stuff that has High Fructose Corn Syrup in it. Why do they put that in canned tomatoes anyway???? There are ones out there without it but you have to watch. - 5/18/10

    This dish is absolutely amazing! I ate a cup of it with a salad for dinner and it was extremely filling. I used Del Monte Petite Cut Diced Tomatoes with Zesty Jalapenos to sub the regular tomatoes, chili powder and cumin and dry celantro instead of curry powder. Let sit 15 min before eating.     Next to no preparation if you use canned black beans, and a simple, no fuss one pot hearty meal. Definitely going to be a regular meal, and its basic enough to allow me to play with variations on the seasonings, just to see what else goes with the base ingredients. Absolutely loved it.     I just made this dish and loved it! I rinsed the black beans under running water to remove the sodium. Using fresh roma tomatoes cuts the sodium content also. I used left over brown rice that I had cooked yesterday and after reading the reviews I used the cumin, paprika, and chili powder to season. - 8/15/11

    I have made this twice, once with unsalted, diced tomatoes, and once with the regular, diced tomatoes. I can definitely tell a difference in the taste between one and the other. Both are very good. I'm not restricting sodium, so I go for the regular variety. Very good recipe! - 6/22/11

    This was such a quick and easy recipe - it actually bested another rice & beans recipe that we also love! I used Uncle Ben's Wild & Brown rice blend (don't worry about the seasoning), Penzey's Salad Elegant spice blend (instead of paprika alone) and tossed in about 1/4 cup of slices olives w/ juice - 3/24/11

    I made this tonight. It was great! I used dried black bean and brown rice I added 1/2 tsp of chili powder,1/2 tsp of cumin and 1/2 tsp of paprika I used a 14 oz can of diced tomatoes and a small can of rotels med. cooked it down and rolled it up into 4 corn torts.
