Number of Servings: 4

Ingredients

    1 cup couscous
    Water
    1 cup chicken breast (pre-cooked;cubed)
    1 tsp olive oil
    1 cup raw onions
    1 cup raw peppers-any color
    1 cup raw carrots

Directions

In a small saucepan prepare the couscous according to the package directions.
Meanwhile in a skillet heat the olive oil and add the onions, peppers and carrots and saute until softened and carmelized.
Add in your cubed chicken to warm.
When couscous is ready add into chicken and veggie mix to heat through.
Serve when warmed.

    I made the recipe per instructions. It had a pretty good flavor but needed something "extra". It was plenty moist enough. I used red, yellow and orange peppers but because of the carrots--it was a bit too orange! Very easy to make and a good base recipe for a variety of different flavor combos. - 4/30/19

    I did think the original sounded bland, so I combined a few suggestions people had put on here. I added chicken broth to the couscous, garlic and cumin to the veggies (used broccoli and added mushrooms), and sauteed the chicken in teriyaki before adding! Not bad!     The veggies added more to the plate. The chicken was already cooked in a combo of teriyaki & bbq sauce, so it had its own flavor. I didn't have to add anything. I sauteed the carrots first, then added the green peppers, and lastly added the onion. Used a red onion which gave it even more flavor. - 1/23/12

    I made the recipe exactly as given. I thought this was really bland. I wasn't sure how I was supposed to prepare the vegetables so I diced them. The onions were done before the carrots & peppers were soft. I wish it said how many cups are in a serving. Husband liked it. - 11/7/11

    Is this recipe supposed to be 1 cup PREPARED couscous? If I try and confirm the nutritional value I get 150 calories for 1/4 cup UN prepared couscous so I'm not sure how the creator of the recipe gets 30 calories for 1/4 cup. - 1/24/11
