Introduction

Delicious, creamy low carb soup. Comfort food! Delicious, creamy low carb soup. Comfort food!
Number of Servings: 8

Ingredients

    4 cups water
    3 chicken breasts
    1/2 large onion, chopped
    1/4 large cabbage, shredded
    1 can stewed tomatoes, undrained
    1 small can diced green chiles, undrained
    1 cup salsa
    1 8 oz pkg cream cheese, softened
    4 Tbs Heavy whipping cream
    1 Tbp garlic salt
    1 Tbs ground cumin
    salt and pepper to taste


Directions

Place chicken breasts, onion and cabbage in the crock pot with 4 cups water. Cook on high for 4 hours (low 6-8 hours) or until chicken is done. Take chicken out of the broth, and shred into bite sized pieces. Put the chicken back in the pot, add the remaining ing ingredeints and cook until cream cheese is melted and soup is nice and creamy. Serve with optional shredded cheese, and a dollop of sour cream. Add some crumbled tortilla chips for those who aren't low carbing. Serves 8

    It was all right. I think next time I'm going to try and sautee the onion because it came out too crunchy and was distracting from the other flavors/textures in the soup. It was also more watery than I expected. I might try some of the other user's variations with sour cream and such next time too. - 1/18/14

    Incredible!
    I thought it was great. I did replace the water with chicken stock and I used less green chiles. Overall it was great and I would cook it again. I used the crockpot. - 11/4/14

    This was very good. I used a tub of sour cream and chive cream cheese b/c it's what I had on hand. I also added 4 chicken bouillon cubes and quite a bit of crushed red pepper to taste. - 3/17/13

    This is amazing! I didn't have time to put it in the crock pot, so I just boiled the first four ingredients for about a half an hour. This is now my new favorite soup!!!! - 7/25/12

    This was great! I left out the salsa and heavy cream, added an extra can of green chillies. This is by far, one of the best soups I have had. Also, I couldn't wait to make it, so I didn't use a crock pot, simmered for about an hour on stove top. YUM YUM! - 11/10/11
