Butterscotch Cookies Recipes

These are great cookies to make if you're in a hurry and just to eat as a low calorie snack. They're very soft and have a great flavor. I make these all the time for my friends and it seems like I can never make enough!
I've also made them with sugar- free chocolate pudding and vanilla pudding and they're still excellent. Also, if you're looking for a little extra flavor, add half chocolate chips and half butterscotch chips or white chocolate chips.

also in this recipe is 1 2/3 cups butterscotch chips. add 43 calories to each cookie for these.

Rich with browned butter, butterscotch extract, butterscotch chips and Demerara sugar, you'd never guess these cookies made with ground pecans and flax were also gluten free and eggless!

These are a family (and work) favorite

I've reduced the sugar content by substituting Splenda for granulated white sugar. The fat content has been reduced by using 2 egg whites instead of a 1 whole egg. Fiber content has been increased by using whole wheat pastry flour and adding quick oats.

These are a guilty pleasure and party favorite!

There is nothing dietary about these cookies to be honest. they are just really good.
