Ingredients

    1/2 cup bread crumbs
    2 eggs, slightly beaten
    1/2 cup milk
    1 can salmon, drained and flaked
    1 tsp lemon juice
    1/2 tsp salt
    Dash pepper
    1/2 tsp sage
    2 tsp finely chopped onion
    1 tbsp chopped parsley
    1 tbsp melted butter

Directions

Combine ingredients in order given. Pack firmly into buttered loaf pan and bake at 350 for 30-40 minutes. Turn out onto platter and garnish with sliced hard-boiled egges and sliced pickles.

    So nice, hubby asked me to do it often. How big is a "can of salmon" anyway, on the ingredient list it shows 1.2 can pink salmon. I think two of the flat cans 220 grams each. This time I used organic spelt flakes instead of crumbs, a whole small onion, and added a Tablesp of Worchester sauce - 8/18/09

    It's a good recipe. I made a few changes -- used only one egg, 3/8 cup of bread crumbs, and omitted the salt. It was well received by everyone. - 8/1/12

    Very similar to my recipe, but love the zing of the onion, spices and like another sparker, I added the worchestershire sauce. I left off the hard boiled egg & dill though... served with a bit of salsa instead. - 3/25/10

    Very good! I used 1 tblsp. dried minced onion instead of the 2 tsp. of fresh. Next time I will line the pan with parchment because I had trouble getting it out nicely, but it tasted great! - 2/18/08
