Introduction

A new way to eat rice! A new way to eat rice!
Number of Servings: 8

Ingredients

    2 cups apple juice
    2 cups instant white rice
    2 tbsp butter
    2 Macintosh apples ( or other sweet apples) diced into small pieces

Directions

In a sauce pan, add diced apples and apple juice. Bring to a boil.
Add in white rice and cook over lowest heat until all juice is absorbed.
Add in butter.
Serve and enjoy.

    I'll use brown rice, leave the peel on organic apples, a bit of nutmeg and cinnamon and use Olivio instead of butter or margarine. I think I"ll toss in some pecans, too... - 11/26/07

    instant rice is the kind in the box for example Minute Rice. It also works with brown rice which is much higher in fiber. You may have to adjust the liquid but I just added water to get the right amount - 7/20/08

    Ok I have a question, when is says instant rice (I'm new to this so give me a break here) is it the kind in a bag or is it loose rice? I really want to make this but want to make sure I am using the right rice! Thanks! - 12/21/07

    I didn't make this, made my own version - cooked 1 cup brown rice, more nutrition, not much difference in taste, then added 1 can crushed pineapple, no sugar added, and 1/2 cup coconut, and 1 1/2 cup vanilla soy milk, low fat. Baked in 350 oven until top lightly browned. Love it! - 11/26/07

    The rice had a really good flavor, I made it with the baked pork chops. It was a great pairing. Next time I might mash the apple pieces a bit before adding the rice, but otherwise thumbs up! - 5/18/07

    The rice had a very interesting flavor. I liked it but my husband did not like it. He is not a big fruit eater to begin with but he thought it made it to sweet. I am going to reheat the leftovers for my breakfast and add some cinnamon and sugar. - 10/12/09

    Incredible!
    If you cook the rice and layer it with the cooked apples, then serve sprinkled with splenda and cinammon - we used to have this as child. It can also be served with yogurt(low-fat Greek style is yummy) - 11/26/07

    Great idea!! I too substituted instant brown rice. I also used margarine instead of butter and I've even used apple cider rather than juice. I used gala apples because that's what's plentiful in my neck of the woods. It really does fill you too ;) We sprinkle cinnamon on it. - 11/26/07

    Well I know that I love eating rice, and apple sounds a great addition. Will try this in the next day or two and let you know. Love fruit with pork or chicken so I know that this will be a great additon as a side dish. - 11/26/07
