Introduction
This is the dough that I make for bread and cinnamon rolls This is the dough that I make for bread and cinnamon rollsNumber of Servings: 168
Ingredients

1/4 cup of yeast
1 cup of hot water and 1 TBS sugar
3 cups of milk
3 cups of water
1 cup of brown sugar
1 cup of oil
3 TBS salt
18 cups of flour
Take 1/4 cup of yeast and 1 TBS of sugar and 1 cup of hot water
Proof the yeast [letting it sit] for 10 minutes
Add salt, oil, brown sugar [or honey]
Heat milk/water [6 cups] until very warm.
Add to the mixture
Add about 8 cups of whole wheat flour and mix for 3 minutes. Let sit for 5 minutes
Add 2 cups of white flour and the remaining whole wheat flour until the dough is pulling away from the sides of the machine.
Knead for 15 minutes on the lowest setting on your mixer.
Let dough rest 15 minutes on counter
Make 1 1/2 # loaves in 4x8 pans. Let rise until double. Bake @ 350 for 19-23 minutes
When the loaves come out of the oven, I rub butter on the tops to soften.
