Introduction

Ingredients

    1 pound cod fillets
    1 egg white
    ¼ cup buttermilk
    ¼ cup dry bread crumbs
    ¼ cup cornmeal
    1 ½ teaspoons lemon peel, grated
    ½ teaspoon basil
    ¼ tsp black pepper

Directions

Preheat oven to 450F.
Cut fish into serving-size pieces.
Beat egg white with buttermilk until frothy, and set aside.
Combine bread crumbs, cornmeal, lemon peel, basil and pepper.
Dip fish into egg white mixture then coat with bread crumbs.
Spray a shallow baking pan with nonstick cooking spray.
Place fillets in baking pan, tucking under any thin edges.
Bake 6 to 12 minutes or until fish flakes easily with a fork.

    This fish was good, I omitted the egg and buttermilk, and used crushed crackers for the breadcrumbs, and it was a winner, with a family that loves fried fish, thanks this will help keep them eating more healthy and not complain so much about it actually being healthy. - 7/1/08

    I wanted to try something different, as we grill our fish most of the time. This was nice, I did cut it into smaller pieces thinking that may help make it crispier-and it worked. I added Old Bay Seasoning, in addition to the seasonings in the recipe...the family enjoyed it! - 3/13/08

    Very Good
    I sliced 1 fillet into strips for my daughter, and left the other fillets whole. Unfortunately my fish was still slightly frozen so the breading didn't crisp up on the fillets, but the strips were crispy. The entire family enjoyed it even if the fillets weren't crunchy. - 5/10/18
