Ingredients

16 oz 93% lean ground beef
1/2 small onion
2 cloves garlic, chopped
1 tsp basil
1 tsp parsley, dried
1 large egg
1 cup quick cooking brown rice
4 tsp yellow mustard
1 tsp brown sugar, packed
15 oz can tomato sauce
Directions
Mix first 8 ingredients plus 1/4 cup of tomato sauce.
Make into 20 meatballs.
Brown meatballs in large skillet.
Add mustard and brown sugar to tomato sauce in can.
Pour over meatballs when they are brown.
Cover and let simmer on low for about 20 minutes.
Stir occasionally.

WONDERFUL! Made one oops and it turned out great. I added 4tsp brown mustard to the meat AND the sauce. Great mistake! I also baked it in the oven in a 9x13 pan @325° for 60 minutes with a lid and @350° for 15 minutes without the lid. love it love it love it. WILL make again. - 6/14/08

Thanks for the suggestion of baking the meatballs it makes things even eaiser but I couldnt remeber how to do it!

Had these as a kid, came about when mom made stuffed green peppers & kids didn't like cooked green pepper, mom made porcupine balls and put on top of the stuffed peppers and pours tomato sauce on top of it all and cooked in oven . Now I eat both, of course! Delicious! We also, put 1 egg per # meat. - 6/20/10

My boyfriend suggested having meatballs and there was this porcupine ball on my spark page. I plan on making it tonight without the sauce. I also wil cut up mushrooms to add to the burger and plan on adding a package of Lipton Onion Soup Mix, just one to as not to over power it. Can't wait to try it - 3/26/09

Made these as a GF alternative to breadcrumbs, very very good, I baked mine on a rack in a half sheet pan, and turned halfway thru cooking. ALS748, I haven't had these for 50, our schools cooks used to make them, also plan to freeze some. Good tip on letting them sit a while before baking, Thanks. - 3/25/20

Very good. I wasn't sure about putting in uncooked instant rice...but I followed the directions and they were delish. I will take other's advice next time and cook the rice first to keep shape...my only complaint is they were hard to brown and keep together. May also try baking. Nice recipe - 5/27/17

Delicious! I quadrupled the recipe to make 4 meals of 25 meatballs each. (Family of 4, 5 meatballs each). Substituted a 50/50 mix of cooked brown rice and raw rolled oats for the quick brown rice. Suggest some salt and extra mustard in the meat mix for extra flavor. Freezes well--very convenient! - 3/21/14
