Number of Servings: 18

Ingredients

    2 Cups Old Fashioned Oats
    1 Cup Oat Flour (make your own by grinding oats in coffee grinder)
    1 1/2 Tsp Cinnamon
    Pinch of Salt
    1 Tsp Baking Powder
    1 1/2 Cup Almond Milk
    3 Tbsp Agave or Honey
    1/2 Cup Applesauce
    1 Large Egg
    1 Tsp Vanilla Extract
    3/4 Cup Cranberries, Raisins, Blueberries, and/or Cherries
    1/2 Cup Walnuts

Directions

1. Preheat oven to 375 degrees.
2. Mix dry ingredients.
3. Mix wet ingredients.
4. Pour dry into wet and stir to combine.
5. Pour into a 7 x 11 inch baking dish either buttered or greased or lined with parchment.
6. Bake for 30 minutes or until thickened and golden.
7. Cool and cut into 18 squares.

Refrigerating the bars will make them last up to 5 days.

You can double the recipe and bake in a 9 x 13 inch baking dish, making each bar 2 servings.

    These could easily be made vegan by replacing the egg with egg replacer (Like Ener-G brand.) Not to mention cutting out all the cholesterol! - 7/13/10

    I'm guessing the agave in the directions substitutes for the honey in the ingredients list. - 7/13/10

    Would love to try this but I"m confused; there's no listing of agave in the ingredients but in the recipe it says add agave. HELP?? - 7/13/10

    I fixed the ingredients list. I've made these bars with both honey and agave and both sweeteners work well.
