Ingredients

    3 bell peppers
    1 cup of frozen chopped onions and peppers
    1 cup of tomato sauce
    2 tablespoons of olive oil
    .75 cup of reduced fat shredded cheese
    2 tablespoons of ketchup
    1.5 cups of morning star veggie crumbles
    1 cup of cooked white rice
    1 tablespoon of parsley

Directions

1.Cut the bell peppers in half and clean them out. You should have 6 hallow halves.
2. Pre-heat oven for 400 degrees
3. In skillet add 2 tablespoons of olive oil and 1 cup of chopped onions and peppers. Cook the onions and peppers until they are soft.
4. Add in 1.5 cups of morning star veggie crumbles and 1 tablespoon of parsley. Cook on low for 5 minutes.
5. Add in rice and tomato sauce.
6. Add salt and pepper to taste.
7. Fill the bell peppers with the stuffing.
8. Drizzle ketchup on each bell pepper.
9. Cover with shredded cheese.
10. Cook for 30 minutes, until peppers are soft and cheese is melted.
