Introduction

Number of Servings: 3

Ingredients

    1 cup whole wheat pastry flour
    1.5 tsp baking powder
    1/2 tsp ground nutmeg
    1/2 tsp ground cinnamon
    2 organic eggs
    2 Tbsp organic cane sugar (or brown sugar)
    1/2 cup pumpkin puree (fresh or canned)
    1 medium apple of choice, finely chopped and divided

Directions

Preheat waffle iron.

Combine flour, baking powder, nutmeg and cinnamon in a small bowl.

In a separate bowl, mix eggs with sugar. Add to the dry mixture (note that the mixture will be very dry at this stage). Fold in the pumpkin and half of the chopped apple until well combined into a thick, moist batter.

Add batter to waffle iron--about 1/4 cup batter per 4-inch waffle--and cook until done. Garnish cooked waffles with the remaining apple and top with real maple syrup. Enjoy!

Makes about six 4-inch waffles. Serving = 2 Waffles.

    I used 1/2 c. applesauce instead of the whole apple. It was suitable for my family's health issues - high blood pressure, diabetes, vegetarian and picky teenager & toddler. We love them! - 5/12/09

    These were great and one serving was super filling! I don't like chunks of apple in things so I used 1/2 of unsweetened applesauce for the apple and they turned out great! - 1/28/09

    My husband said it wasn't waffle but a "little apple pie cooked in the waffle iron". I really liked these BUT I used them to try out my brand new Waring Pro Professional waffle maker wedding gift and the batter seemed too thick for this application). Tasted great, filling, and plenty sweet - 11/8/08

    Saw that a lot of people thought they were heavy, I separated the eggs and beat the whites to stiff peaks and folded them in, also used applesauce, and white whole wheat flour, I think the applesauce added necessary liquid. Great taste! Liked that the servings were clear amounts! - 2/13/15

    These were good. My girls liked them but thought they had to much apple. I doubled the recipe and put a lg apple in. I did use an 1/8 c soy milk. I will try again with a little less apple next time. The girls said try again, which is a good sign:) - 1/21/09

    I stirred 1/4 cup milk and the pumpkin into the eggs, then folded the liquid and apples (warmed in the microwave) into the dry ingredients. The batter was still thick enough it needed to be spread out on the waffle iron with a spatula. Tastes good.
    DH says they taste like pumpkin pie in a waffle.

    I made these yesterday. The whole house smelled like pumpkin pie baking. I used whole wheat flour and 1/2 cup of applesauce as I do not like apple chunks. Also added 1/4 cup of non-fat milk to make the batter a little easier to pour onto my waffle maker. These are truly yummy and very filling. - 9/30/14

    I steamed the apples to soften them because I made pancakes instead of waffles (family preference). I liked the suggestion of the ripened banana instead of sugar and used that as well, along with the ground flaxseed. Turned out nicely. - 4/11/19

    I don't know what "whole wheat pastry flour" is and couldn't find it at the grocery store. So I just used regular whole wheat flour and it worked well. I liked these waffles a lot, but next time I might leave out the nutmeg and double the cinnamon. - 1/5/17

    Made as directed, even bought pastry flour, and got a thick batter as the recipe mentions. First one didn't cook well and I remembered I've never had a batter not pourable. Added almond milk and it was a little better. Still only made 3 waffles. If I try again, I'll use applesauce for more moisture. - 11/5/16

    No pastry flour so I used a cup of regular ww flour. That made the batter thicker than I liked so I added buttermilk until it was the consistency of pancake batter. Very good waffles! - 9/21/16

    Never made waffles this thick, but it worked. Good flavor. Measured out 1/4 cup to get 6-7 waffles. Worked using 4 egg whites too. A bit heavier then some recipes but we liked it as a more substantial waffle. Good to toast leftovers, used traditional Al Clad waffle maker. - 9/11/16

    These were a nice change. I added approx 1/4-1/2 cup of organic milk since the batter was way too thick. I grated the apple since I have children who dislike apple chunks.     If you read the good reviews, the cooks altered the recipe. I made it as written and it was too thick to spread on the waffle iron and the test waffle was rubbery. Then I added some milk for consistency and they were little better. I think this needs applesauce not apples and mine was a juicy apple - 11/24/13
