Ingredients

1 cup whole wheat pastry flour
1.5 tsp baking powder
1/2 tsp ground nutmeg
1/2 tsp ground cinnamon
2 organic eggs
2 Tbsp organic cane sugar (or brown sugar)
1/2 cup pumpkin puree (fresh or canned)
1 medium apple of choice, finely chopped and divided
Directions
Preheat waffle iron.
Combine flour, baking powder, nutmeg and cinnamon in a small bowl.
In a separate bowl, mix eggs with sugar. Add to the dry mixture (note that the mixture will be very dry at this stage). Fold in the pumpkin and half of the chopped apple until well combined into a thick, moist batter.
Add batter to waffle iron--about 1/4 cup batter per 4-inch waffle--and cook until done. Garnish cooked waffles with the remaining apple and top with real maple syrup. Enjoy!

My husband said it wasn't waffle but a "little apple pie cooked in the waffle iron". I really liked these BUT I used them to try out my brand new Waring Pro Professional waffle maker wedding gift and the batter seemed too thick for this application). I stirred 1/4 cup milk and the pumpkin into the eggs, then folded the liquid and apples (warmed in the microwave) into the dry ingredients. The batter was still thick enough it needed to be spread out on the waffle iron with a spatula. Tastes good.

I made these yesterday. The whole house smelled like pumpkin pie baking. I used whole wheat flour and 1/2 cup of applesauce as I do not like apple chunks. Also added 1/4 cup of non-fat milk to make the batter a little easier to pour onto my waffle maker. These are truly yummy and very filling. - 9/30/14

Made as directed, even bought pastry flour, and got a thick batter as the recipe mentions. First one didn't cook well and I remembered I've never had a batter not pourable. Added almond milk and it was a little better. Still only made 3 waffles. If I try again, I'll use applesauce for more moisture. - 11/5/16

These were a nice change. I added approx 1/4-1/2 cup of organic milk since the batter was way too thick. I grated the apple since I have children who dislike apple chunks. If you read the good reviews, the cooks altered the recipe. I made it as written and it was too thick to spread on the waffle iron and the test waffle was rubbery. Then I added some milk for consistency and they were little better. I think this needs applesauce not apples and mine was a juicy apple - 11/24/13
