Introduction
Low fat, low calorie cookies to satisfy your sweet tooth! Low fat, low calorie cookies to satisfy your sweet tooth!Number of Servings: 30
Ingredients

1 cup whole wheat flour
1-1/2 cups quick-cooking oats
1/2 cup sugar
1 tsp. baking soda
1/4 cup prune puree (or a jar of prune baby food works great!!!!)
1/4 cup plus 2 tbsp. of light pancake syrup, honey or molasses
1 tsp. vanilla extract
1/2 cup dark raisins
1.2 cup chopped walnuts (optional- not calculated)
Directions
1. Preheat oven to 350. Combine flor, oats, sugar and baking soda, and stir to mix well. Add the prune puree, honey or molasses, and vanilla extract; stir to mix well. (If dough seems crumbly, keepstirring until it holds together). Stir in raisins and nuts if desired.
2. Coat a baking sheet in cooking spray. Droprounded teaspoonfuls of dough onto sheet, placing them 1-1/2 inches apart. Slightly flatten each cookie with the tip of a spoon.
3. Bake at 350 for about 9 minutes, or until golden brown. Cool the cookies in the pan. Serve. Store cookies in an airtight container in single layers seperated by waxed paper.

i tried these with the suggested adjustments (omitted sugar, added egg, used honey and applesauce) and found them to be very bland...could be that i used unsweetened applesauce, but still. added 1/2 brown sugar and another egg and cooked a few minutes longer... THESE were more like cookies to me - 3/25/09
