Ingredients

    • 1 lb. ground turkey
    • 1 tablespoon olive oil
    • 3 garlic cloves, minced
    • 2 onions, chopped
    • 2 10 oz. cans black beans, drained and slightly mashed
    • 1 tablespoon chili powder
    • 1 tablespoon ground cumin
    • 2 cups tomato sauce
    • 1 10 oz. can stewed tomatoes, coarsely chopped
    • 6 medium whole wheat tortillas
    • 1 cup low fat shredded cheddar cheese

Directions

1. Preheat oven 350° F.

2. Sauté 1 onion, 1 garlic clove on high heat while breaking up meat. Cook until meat is no longer pink. Stir in black beans. Set sauté pan aside.

3. Heat oil in another sauté pan over medium heat. Sauté remaining onion, until soft. Add remaining garlic, chili powder and cumin, sauté for 30 seconds. Add tomato sauce and tomatoes with juice. Bring to a boil. Reduce heat to low, simmer partially covered for 20 minutes or until sauce is slightly thickened. Transfer all but 1/2 c sauce to meat and beans; Mix well.

4. Dip half the tortillas, one at a time, in the hot tomato sauce. Lay tortillas in the bottom of an 8.5 x 11 casserole dish. Spread half meat and bean mixture over tortillas. Sprinkle half the cheese over meat and beans.

5. Add another layer of tortillas and meat & beans mixture. Sprinkle with remaining cheese. Bake 35 minutes or until bubbly and cheese is melted. Let stand 5 minutes.

Serves 6.

    I made this and it is delicious. Yes it is higher in fat and calories, but I plan my whole day at once and make allowances somewhere else for the extras. Very tasty and feels like you are eating something sinful. - 5/22/09

    I have made this 3 or 4 times so far and love it. I notice that alot of people think its to high in fat and calories but I make it into 10 meals not 6 and have some veggies with it and that's plenty of food and cuts the calories way down. - 1/16/09

    My husband and I relly liked this recipe. Even my 97 year old mother in-law liked it. I only made a couple of little changes to reduce the sodium (like no salt tomatoes), but nothing major. I think next time I might even spice things up a little more with extra chili powder, green chilis or salsa. - 5/29/09

    I made this and my fiance and son were both thrilled. I am gluten sensitive so I ate the filling without the tortillas. The tortilla layers really make a delicious difference so I recommend eating this as is. Maybe a little fat free sour cream as well. - 12/9/08

    I tried it tonight and it was delicious. It was the first time my family and I had black beans (Beans are very unpopular in Québec, I don't know why!). Every one loved it! Of course, it has a lot of calories, but since it tastes so good, I'll keep it for the special nights! - 11/22/08

    This was great, very filling. I used Joseph's Whole Wheat tortillas (tons of fiber and protein, low cal) and this definetly makes at least 8 hearty servings. Can't wait to make it again! - 5/27/08

    I loved it. It was easy to prepare ahead of time. It served our hungry family of four and enough for two lunches afterwards. I do suggest blending the tomatoes if your young ones don't like them. - 1/7/09

    I just used a jar of Pace spicy salsa instead of the 2cps. tomato....Ole....Chef Jim.
    Also I put flax meal in almost everthing I cook now,hot or cold.

    Loved this and so did my 13yo DS. Even my DH liked it and he's not a fan of mexican food. Great mix of flavors. Nice firm casserole. Easy to make (I assembled it ahead of time.) and easy to tweak for those who care to. I can see using whatever I have on hand to put it together. GREAT IDEA! A Keeper! - 6/10/09

    I loved this but don't see where the fat and calories are so high. Has anyone rechecked these calculations? It sure doesn't seem like it is higher than a regular lasagna which is about what this add up to. I don't trust these figures - 6/6/09

    This is a great recipe...Had to tweek it a bit to cut down sodium, carbs and calories and did my own black beans night before...I also microwaved it instead of oven...It reminds me of my pampered chef recipe I make at my shows...Love the black beans in it... - 5/22/09

    You really don't need oil to saute onion. You can also greatly reduce the calories by using corn tortillas. Too much cheese! Try a dollop of fat free sour cream when serving instead. This recipe is too high in calories for me. - 5/22/09

    I liked this but had to add my own twist to it. First added peppers and a bag of frozen mixed veggies. Also cheated a little though, added more cheese and topped with sour cream. but came out with lots more servings so might not be so bad. also had not beans. - 3/12/09

    I always use lean beef when cooking but I think I'm going to try this using chicken next time. Also this would be great with bell peppers added to it to give it just a bit more flavor and I used pinto instead of black beans. - 5/23/08

    this is unbelievably good. I had to use lean beef no turkey on hand. substituted taco seasoning for chili powder and my can sizes were slightly more than called for. My hubby and I just loved it - 2/17/08

    I have a slightly different version that is faster. Brown the meat, add the black beans, some low sodium salsa & frozen corn. Put some salsa in the bottom of the pan, then layer in your ww tortillas (I find that cutting them in half works great), 1/2 the meat bean combo, cheese & repeat. Bake 15 min - 11/19/08

    This is wonderful. I used La Tortilla Low Carb tortillas and they made this dish very low carb. We loved it. I still have some left over in the fridge and it's great the second and third time around. Yummy and easy. - 11/18/08

    Going to try this. To cut fat use fat free cheddar and low fat tortillas. I make my own beans from dried beans for lower sodium too. Decrease the meat and add more beans for less fat too. - 5/22/08

    This was wonderful! All of my kids loved it. I think this could be made in a 9x13 pan. I filled my 8x11 to the brim and still had about a 1/4 of the meat and bean mixture left over. (I'm going to freeze it and make burritos with it later.) - 1/24/08

    I have made Mexican Lasagna before. My recipe includes a layer of sauted peppers & onions, just to get more veggies. We also like spicy so I add some hot suace and hot salsa to the ground turkey after cooking and draining it. Yum! I also use whole wheat tortillas for the extra fiber & health benefit - 4/2/10

    I make this with turkey, chicken or ground beef. use meat & seasoning, tortillas, beans and cheese. Tortilla on bottom, beans, meat then chese in layers cover dish with glad wrap and microwave about 10 minutes YUMMMy.     This sounds good, but is a bit high in fat. I would use vegetarian crumble or "chicken style" seitan, cut the cheese in half and use crushed tomatoes or low sodium tomato juice instead of tomato sauce. That would help cut the fat, caloroes and sodium and it would still taste great. - 1/1/09

    I will definitely try this. We bought five turkeys on sale for 49 cents a pound after Thanksgiving so interesting turkey recipees are appreciated! As for the calories, I will probably consider this to have 8 servings rather than six to cut back on calories. - 12/25/08
