Ingredients

1 Ready made pie crust
1 15oz can pumpkin
1 12oz can fat free evaporated skim milk
2 tsp pumpkin pie spice
1/2 cup egg mates ( equivelant 2 eggs)
3/4 cup granulated splenda
Directions
preheat oven 425. Mix all ingredients. Pour into unbaked pie crust. Bake 15 mins. at 425 decrease temp to 350 bake additional 40-45 mins. Serves 8

I make this without the pie crust and add a layer of chopped almonds to the bottom of the pie pan instead. Its a thin layer I have used sliced almonds but the chopped seemed to be a little more texturey if that makes sense. I did toast the almonds first cooled them then placed in the bottom. - 9/8/13
