Ingredients

    Spinach, fresh, 1 package (10 oz)
    Reduced Fat Mayo with Olive Oil, 5 tbsp
    Fat Free Plain Greek Yogurt, 5 oz
    Garlic powder, .25 tsp
    Pepper, black, 2 dash
    Mozzarella Cheese, part skim milk, 3 oz
    Reduced Fat Feta Cheese, Crumbled, 0.25 cup
    Chicken Breast, no skin, 10 oz
    Extra Virgin Olive Oil, 1 tbsp

Directions

Preheat oven to 350 degrees F. Spritz an 8-inch baking dish with cooking spray. Combine 10 oz. of cooked, cubed chicken breast or thighs with 10 oz. spinach in a mixing bowl. If using frozen spinach, thaw and thoroughly drain first. Fold in 5 oz. of Greek yogurt, 5 tbsp of low fat mayonnaise, 1/4 tsp. garlic powder, 1 tbsp EVOO and a few twists of the pepper grinder.

In a separate bowl, mix together 1/4 cup reduced fat Feta cheese and 3 oz. low fat shredded mozzarella cheese. Add 1/4 cup cheese mixture to the chicken and spinach and mix well. Spread evenly in the baking dish and sprinkle the rest of the cheese mixture on top.

Bake 40 minutes.

Serving Size: Makes 4 servings

    Just made this and it is very good. And to those saying it is not low-carb --- dishes CAN BE both low-carb AND low-fat. This one is both. The South Beach Diet stresses BOTH low-fat AND low-carb and the weight falls off! :) - 3/1/13

    Love this chicken casserole. Meanwhile on a low card diet did this for whole family. They loved it. Is very tasty. I served to them with rice but I ate it as is coming out of the oven, very filling and savory. Makes 4 plates as a side dish. I would say only 2 servings as a main. If you make this as - 3/30/19

    Really easy to modify this dish. Went with a coconut lime flavor for the chicken and opted out with the mayo. Used raw spinach and forgot to mix the cheese mix in so I dusted the top with it. Covered the top with foil while it baked. Super yummy. Will add onion and mushrooms next go around. - 7/31/17

    I made this for dinner today and it yummy! I made a few changes because I didnt have everything on hand. 4 tbsp mayo, sour cream and 3 tbsp cottage cheese, 2 oz of chedder drizzle of olive oil, 4 cloves of smashed minced garlic and salt and pepper to taste. 2 chicken thighs seasoned and cooked. - 10/7/14

    It is not low carb because, in low carb cooking you always, without exception, use full fat ingredients. That is the whole point of low carb. I made it with full fat sour cream, it's low carb and delicious, thanks - 2/11/13

    Cooking as we speak - it smells delicious! I used the olive oil and minced garlic to saute the chicken in. I was looking for a recipe that included all of the above ingredients, (basically a low carb version of a Greek chicken dish). I'm confused as to why one poster said this is not low carb? - 8/10/12

    This was really good. I didn't have greek yogurt so I substituted light sour cream. I also substituted fresh Mozzerralla and used 2 cloves of garlic. I Used the olive oil to grease my baking dish. I used fresh baby spinach 6 ounce. Was watery but drained a little then mix. so creamy and yummy - 3/28/12
