I love this low carb chicken spinach casserole recipe! Yummy
I made this for dinner today and it yummy! I made a few changes because I didnt have everything on hand. 4 tbsp mayo, sour cream and 3 tbsp cottage cheese, 2 oz of chedder drizzle of olive oil, 4 cloves of smashed minced garlic and salt and pepper to taste. 2 chicken thighs seasoned and cooked.
Just made this and it is very good. And to those saying it is not low-carb --- dishes CAN BE both low-carb AND low-fat. This one is both. The South Beach Diet stresses BOTH low-fat AND low-carb and the weight falls off! :)
It is not low carb because, in low carb cooking you always, without exception, use full fat ingredients. That is the whole point of low carb. I made it with full fat sour cream, it's low carb and delicious, thanks
I love this recipe - 2nd time making it today. I use fresh garlic & lots of pepper. I use low fat cottage cheese, some mayo, greek yogurt & parmesean cheese - it is yum!!!!
Cooking as we speak - it smells delicious! I used the olive oil and minced garlic to saute the chicken in. I was looking for a recipe that included all of the above ingredients, (basically a low carb version of a Greek chicken dish). I'm confused as to why one poster said this is not low carb?
