Ingredients

    1 Cornish Hen, Thawed & Cleaned Out
    2 Tsp Ground Cinnamon
    1 Tbsp Garlic Powder
    1 Tsp Salt (or Kosher salt) ( optional)
    1 Tsp Ground Black Pepper ( Fresh is Best)
    1 Tbsp Extra Virgin Olive Oil
    2 Tsp Italian Herb Seasoning

Directions

- Thaw hen according to packaging instruction, rinse clean inside and out.
- Preheat oven to 350 F
- Mix all spices and EVOO together to create a rub.
- Spread rub over the entire hen and place in a oven safe baking dish ( make sure you either line it with tin foil or spray with Pam)
- Bake for approximately 1 hour or until juices run clear.

    I thought this sounded kind of weird but gave it a try anyway. It was such a pleasant surprise! I cut back on the cinnamon by tasting the herb rub until it had a good balance to me. I would absolutely make this again. - 12/2/14

    I served 1/4 of a hen as a 3 0z. serving rather than an entire hen, and combined it with the apple-cornbread stuffing listed here. As an entree for a Mother's Day dinner. Mom and the rest of us really enjoyed it. - 5/13/12

    Incredible!
    This was a hit. I didn't have the garlic powder or Italian herbs, so I substituted Mrs. Dash in place of both. We are on low sodium diets so no salt. So good.... I tried the oil rub on salmon too and substituted a touch of the oil with pure maple syrup. Perfect! Hubby was in heaven. - 3/3/18
