One box of Spice Cake mix
One can (15 oz) pure pumpkin
pecan halves (optional)
Directions
Preheat oven to 350 degrees. Lightly spray cookie sheet or jelly roll pan with cooking oil (ie., Pam).
Put cake mix and pumpkin in a mixing bowl and beat until blended. Spoon onto baking sheet. Top with a pecan half (or not). Bake for 10-12 minutes. Longer bake times yield crunchier results.

These are like pumpkin bread in cookie portions. They don't change shape at all when you cook them. So don't worry about them running into each other as they cook, but do make them as close to what you want them to be as you can. The dough's kind of sticky, so you won't be able to make them perfect - 10/20/09

I made these cookies today, and the info on here is a little off. It's more like 20 minutes bake time for a perfect consistency. I also mixed about 1/2 cup water. How do you get the number of calories/serving? I don't know how to measure the calories on the box of cake mix. Can anyone help? - 9/25/09
