Number of Servings: 2

Ingredients

    1 tsp butter, salted
    1 tbsp flour, white
    1-1/2 cup fat free half and half
    1 cup cooked winter squash, mashed
    1/2 cup shredded cheddar cheese (made with 2% milk)

Directions

Melt butter and stir in flour.
Very gradually add tiny amounts of the half and half, stirring until smooth after each addition.
Keep stirring and add cheese, then squash and salt and pepper to taste.

    I noticed that everyone is commenting about calores. I don't think that it's too bad. You could make a meal of it by adding a garden salad with low cal dressing, and you'd have a meal for less than 500 cals. I usually aim for less than 500 calories. I'm always looking for new ways to make squash - 5/29/08

    What about substituting the flour with corn starch? This should lower the carbs. Reminds me of the acorn soup my lil gramma used to make. - 2/17/09

    Fat free shredded cheddar won't hurt the taste, but will cut the calories. But people really should lay off the author for their calorie content...so people need/eat more calories. If you like less cals like me, modify the recipe, you know how by now, I'd hope.. - 5/29/08

    I made a similar squash soup but without the cheese and cream. I also added onion, and a pinch of nutmeg. It's delicious. - 5/29/08

    Serving size sounds like a big bowl so I don't think the cal are out of line. Perhaps cutting cheese in half and adding something like ginger or dash of hot pepper sauce for kick. - 5/29/08

    Using unsalted butter might help reduce the sodium in this recipe. But if I made this recipe, I would substitute OLIVE OIL to butter anyway. - 5/29/08

    bothers me no instruction for cooking squash...roast in the oven 30 minutes at 400 degrees? Only a guess...only adds about 30 - 40 minutes of cook time for preparing. - 12/8/09

    A lot of calories. No flour, Use Kraft Fat Free Shredded Cheddar... 45 calories. per 1/4 cup Like the idea but not the way it is made. - 6/6/09

    Want to put this together in an easier manner? Melt butter as directed. Mix flour with 1/4 cup of the half & half. Add it and remainder of liquid to butter. When it's hot, add the squash. Low boil about 1 minute. Remove from heat, stir in cheese. Could replace 1/3 - 1/2 liquid w/ chicken stock. - 4/17/09

    I made this recipe and with a little alteration was a wonderful replacement for potatoes on our dinner plates. I added onion and a little bit of carrots and of course garlic. Then I used my hand blender and left out the flour. - 6/3/08

    The sodium content is high for this dish but if you if you get a reduced fat half & half and 2% or reduced fat cheese, the sodium may get better. - 5/29/08

    I didn't make this yet, but it seems like something that would be good. I wouldnt cut the calories more then they already are because it may loose the good flavor. You already use 2% cheese and fat free half and half. Maybe just have half a serving as a treat! - 5/29/08

    would think that is the cheese thats responsible for the high calorie count. I love squash soup,so may try it without the cheese, just wont be as thick. - 5/29/08
