Introduction

I never get tired of this salad--it is that good! Add your favorite dressing, such as balsamic vinaigrette and enjoy this large and filling salad as a summer meal. Number of Servings: 1

Ingredients

    2 cups mixed salad greens, rinsed and drained
    5 large Romaine lettuce leaves, rinsed, drained and torn into pieces
    0.5 oz. roasted and salted pecans, coarsely chopped
    1 hard boiled egg, chilled and chopped
    0.5 oz. goat cheese, crumbled
    1/2 cup cooked garbanzo beans (chickpeas)
    10 red, purple or black grapes, halved
    1-2 thin slices of red onion, finely chopped


Directions

Combine all ingredients into one large bowl. Top with dressing of your choice. Devour happily.

Serving Size: Makes one heaping and delicious salad!

    That's a lot of calories for a salad. Even with the good amount of protein I think I'd be starving soon after. I think a half serving would make a nice side salad to accompany a meal. - 5/21/14

    A very large salad with a lot of calories plus more calories for the dressing which is not included in the count. Sounds tasty but I cannot use that many calories for one salad. How about some lower calorie recipes. - 5/25/21

    Maybe we are limiting our definition of a salad as the skinny part of a meal, the side dish. How about sometimes making it the main part, with this type of salad, and having your sides as the low calorie additions. Something this nourishing deserves to be front and centre, perhaps? - 6/13/21

    Try a orange - (grated orange peel + 1/4 C of orange juice + 1/2 c olive oil and 1/4 c. white balsamic vinegar as a dressing. You only need 1 Tbls or less per person. Add big chunks of watermelon - 2" in place of grapes-garbonzo & egg. Spinach and arugula + goat cheese. Different recipe but great! - 9/17/16

    I make a salad very similar to this all the time, using walnuts instead of pecans, and a sprinkle of crumbled blue cheese instead of the goat cheese, and about a tablespoon of craisins.. I will definitely try this one, as these are the kinds of salads I love!!

    I don't like chickpeas or any kind of beans any suggestions for a substitute? I've never tried goat cheese. This will be a first for me. I would have used grilled chicken and left out the chick peas and cheese. - 6/30/11
