Introduction

Peanut & yogurt dressing give this fruit salad an exciting twist. Peanut & yogurt dressing give this fruit salad an exciting twist.

Ingredients

    • 1 8 oz. can crushed pineapple
    • 1 cup peeled, shredded carrots
    • 1/2 cup chopped apples
    • 1/2 cup chopped pears
    • 1/2 cup peanuts
    • 1/4 cup raisins
    • 1/3 cup plain lowfat yogurt
    • 2 tablespoons peanut butter

Directions

1. In a medium bowl, stir together the first 6 ingredients.

2. In another bowl, blend together the yogurt and peanut butter.

3. Add the yogurt "dressing" to the salad and stir to coat.

Serves 6.

    I loved this! I was skeptical, but made it and immediately ate a big bowl for breakfast. I used chopped almonds since I didn't have peanuts, and no pears, so I doubled the apple. I thought it was delicious, and will be making it again! Seems like an easy recipe to play around with, too. - 3/15/09

    This recipe (made with sunflower seeds instead of peanuts) is in a BH&G kids' cookbook I just got. I made it for the kids and no one liked it. I think, perhaps, if the yogurt/pb "sauce" was cut at least in half it might be a little better. - 3/15/09

    Delicious! I really like how rich the sauce tastes. I just used what I had...apples, pears, craisins, vanilla yogurt, and peanut butter. You could really add anything that you like to eat with peanut butter. VERY easy and yummy! - 1/5/09

    I added banana, left off the pears, used 1/2 of the peanuts and raisins stated and used a product called PB2 and cut the calories way down so it is healthy and fits better into my eating plan..love the different taste! - 7/26/08

    It sounds good, but sounds like people didn't like the sauce. I'd try it with cashews or toasted sliced almonds instead. Maybe even some almond butter in place of the peanut butter. - 7/26/08

    Because I have diverticulitis I cannot eat peanuts but I can eat soft nuts like blanches almonds and cashews so I will sub one of them for the peanuts

    I used dried cranberries in place of raisins and almonds instead of peanuts, 1/2 the peanut butter and a tsp. lime juice. I enjoyed the "differentness" of this salad for a now and then change up in my routine...good on shredded leaf lettuce too. - 5/18/08
