Ingredients

1-1/2 cups sweetened shredded coconut
2 egg whites
1/4 tsp vanilla extract
Dash of salt
2/3 cup granulated sugar
Directions
Beat egg whites and dash of salt until soft peaks form. Gradually add in sugar while beating until peaks are stiff and glossy.
Fold in coconut.
Drop by rounded teaspoon onto greased baking sheet.
Bake at 325*F 18-20 minutes until set and very slightly browned.
Center will still be soft.

First off omg this is the best recipe!! I could have ate them raw no need to cook. I personally used splenda since I had it at the house from the last recipe I did. It was similar to this but with a macadamia halve on top. But let me just say these are better by far no comparsion..yummmy!!! :) - 12/11/08

So easy to make & good. They look like little white snowballs, so pretty! Makes a great Christmas gift & a great holiday cookie for any holiday by adding some food coloring. I added vanilla while beating whites. Put mixing bowl and beaters in freezer for 15 mins & you'll get great meringue. - 12/17/07

These cookies are great especially if you're watching those calories. I only used 1/3 C sugar and they were really good. They were really easy. I had another meringue cookie recipe that called for choco chips and chopped nuts but you bake them different. I think you could add those ingreds to this. - 12/19/07

These were SO easy... and Soooo yummy! I will have a meeting this morning and needed to bring some treat - and this was perfect - easy and quick and yummy and I was able to make it and still get in a workout before my meeting!!! Definitely a keeper! Next time I may add a bit of cocoa or something... - 12/8/08

thanks a taste treat, substituted splenda didn't get 26 too big and sticky stiff, more like 10 min. in my stove i plan on melting some chocolate morsels and folding them in and freezing the bowl and blender blades, also folded in cream of tartar. coconut/chocolate now that's an idea. great recipe! - 2/6/10

I'm excited to make these. I'll be using Splenda half n half...Almond flavoring sounds good also. I have unsweetened coconut flakes on hand so will be using this instead of sweetened coconut.
