Introduction

These are light, fluffy and only about 50 calories each! These are light, fluffy and only about 50 calories each!
Number of Servings: 20

Ingredients

    1-1/2 cups sweetened shredded coconut
    2 egg whites
    1/4 tsp vanilla extract
    Dash of salt
    2/3 cup granulated sugar


Directions

Beat egg whites and dash of salt until soft peaks form. Gradually add in sugar while beating until peaks are stiff and glossy.
Fold in coconut.
Drop by rounded teaspoon onto greased baking sheet.
Bake at 325*F 18-20 minutes until set and very slightly browned.
Center will still be soft.

    These are easy and delicious! I substituted no calorie sugar (Erythritol) instead of the real thing. I got 21 nice size cookies @ 26 calories each. I did chill the bowl and beaters plus turned the oven off when cookies were browned and left them in for a couple of hours. - 12/22/08

    This is a great treat! I have made them a little different by sprinkling dry (flavored, sugar-free) gelatin powder on top of them before putting into the oven. Rasperberry gelatin has been favorite at our house - - 6/16/09

    These are great. I followed the recipe except I baked them for 15 minutes then turned the oven off and let them sit for 2-3 minutes. Also, make sure you grease the pan well because they will stick. I can't wait for my friends to try them tonight. Thanks for sharing! - 4/10/09

    Awesome! For a chocolate fix, add 1 TBSP of cocoa powder (adds 1 calorie per cookie). Also, instead of regular coconut, I toasted it before adding to the mix. These are great. I agree about the cooking spray - get them off the tray quickly too. - 8/2/09

    These cookies were a hit at the holidays! I blinked and they were gone. I would recommend them to anyone. Also, when using a convection oven make sure to watch your cookies before the time in the recipe because mine were finished around the 15 minute mark instead of 18-20 - 12/29/08

    First off omg this is the best recipe!! I could have ate them raw no need to cook. I personally used splenda since I had it at the house from the last recipe I did. It was similar to this but with a macadamia halve on top. But let me just say these are better by far no comparsion..yummmy!!! :) - 12/11/08

    So easy to make & good. They look like little white snowballs, so pretty! Makes a great Christmas gift & a great holiday cookie for any holiday by adding some food coloring. I added vanilla while beating whites. Put mixing bowl and beaters in freezer for 15 mins & you'll get great meringue. - 12/17/07

    These cookies are great especially if you're watching those calories. I only used 1/3 C sugar and they were really good. They were really easy. I had another meringue cookie recipe that called for choco chips and chopped nuts but you bake them different. I think you could add those ingreds to this. - 12/19/07

    These were wonderful! Easy to make... add the vanilla in while beating the eggs. I only needed to bake them for 17min in a convection oven. Will definitely make again (even hubby likes them!) - 12/19/07

    This is a n excellant variation to a basic recipe that I have used without the coconut: 1) mint flavoring and mini chocolate chips 2) cocoa for a light chocolate treat 3) cocoa + instant espresso for a mocha cookie. - 7/5/09

    These were SO easy... and Soooo yummy! I will have a meeting this morning and needed to bring some treat - and this was perfect - easy and quick and yummy and I was able to make it and still get in a workout before my meeting!!!     I'm wondering where the nutrition information came from for these cookies. I came up with 70 calories per cookie when I calculated it. I used sweetened coconut. Is it supposed to be unsweetened? - 12/27/07

    Really tasty!! Mine spread out quite a bit and I took them out of the oven after 14 min. because they were getting brown around the edges, but this was my first meringue attempt.     thanks a taste treat, substituted splenda didn't get 26 too big and sticky stiff, more like 10 min. in my stove i plan on melting some chocolate morsels and folding them in and freezing the bowl and blender blades, also folded in cream of tartar. coconut/chocolate now that's an idea. great recipe! - 2/6/10

    I'm excited to make these. I'll be using Splenda half n half...Almond flavoring sounds good also. I have unsweetened coconut flakes on hand so will be using this instead of sweetened coconut.
