Introduction

This stuffed bell pepper recipe is really delicious! You can use red bell peppers if you like that flavor better. It incorporates your protein, starch, and veggies in one neat package! Ingredients

    4 large green bell peppers
    1 cup of cooked brown rice
    1 lb 93% lean ground turkey
    2 garlic cloves
    1/2 cup chopped onion
    1 can diced tomatoes (with italian seasoning is better)
    tomato sauce - enough to cover the bottom of a casserole dish
    2 tbsp canola oil
    salt and pepper to taste

Directions

Preheat oven to 400 degrees F.
Cut bell peppers in half lengthwise; discard seeds and membranes. Place in a casserole dish - the bottom of the dish should be covered with a thin layer of tomato sauce.
In a pan, add canola oil and sautee the onions until translucent (5-7 minutes). Add minced garlic and cook for 2 minutes. Then add the ground turkey and brown.

In a large bowl, combine the cooked ground turkey, brown rice, and diced tomatoes. Add salt and pepper to taste. Scoop mixture into each bell pepper half.

Bake, covered, for 30 minutes. If desired, uncover, sprinkle mozzarella cheese on top, and bake an additional 5 minutes.

    Easy to make. I like spicy food so I choose a can of dice tomatoes with jalapeno peppers and used a spicy mexican style tomato sauce. Will make this again & again. - 1/28/09

    I tried this recipe and was a hit! Not only did my boyfriend enjoy it with me, but my roommates couldn't resist a taster as well! We like things a little spicier around here, so I cooked the turkey meat with some taco seasoning (20 cals for the packet)! Great flavour!! - 8/3/08

    Absolutely delicious! We chopped up more onions to include and also added some mushrooms and a cup of spinach (it wilted and mixed well into the mix) and it was awesome! Will make again for sure! - 12/5/10

    Excellent!!! The filling could be cut in half and you'd still have plenty, but I liked being able to freeze the surplus for a future meal. I'll either use that in peppers again, or as a tortilla/lettuce wrap, in bread bowls, or ??? It was so good! - 4/8/08

    I made this tonight with red bell peppers. I added some italian seasoning. My husband and I both thought it was delicious, and I think it will become a regular in our household :) I had enough of the filling for another meal. I think I will add black beans and serve it later in the week. - 11/4/09

    I made this last night and it was delicious! I added mushrooms to the mix and used tomatoe sauce instead of diced tomatoes and just added italian seasonings to it. I also parboil my peppers before I fill and bake, just seems to give a better texture that my family likes. - 8/27/09

    I used a mix of red, yellow and orange peppers. I added crushed red pepper in the stuffing mix then in the tomato sauce for the bottom of the pan, I added cayenne pepper. Also I poured some of the sauce on top of the stuffed peppers. Nice and spicy, but still can taste the other flavors. - 10/19/09

    Wanted to use homegrown peppers before they went soft, so I tried this recipe. Used ground (white) chicken because I didn't have turkey. Added Worcestershire sauce for a little spice. Will make again! - 9/26/12

    You can steam the peppers before filling them to make them more tender. I also switch it up sometimes using italian seasoned tomatoes or mexican seasoned using rotelle and adding black beans. Its always a hit. Yellow or red peppers are also good and not as strong as green ones. - 10/25/09

    Made this for work today. Used quinoa instead of brown rice (took less time to cook), ground chicken sauteed with diced onion, plus some chopped kale. I seasoned it all with low-sodium taco seasoning I had, plus red chilli flakes. Topped with diced tomato and a little grated cheese. Loved it! - 6/12/13

    Something I was taught to do was to boil your bell peppers for about 5 minutes before stuffing them to make them softer. I did this before I made it. I also used ground chicken instead. The recipe was great and I had plenty to take to work. - 5/22/13

    I blanched the peppers in boiling water for a minute or so this helps them cook faster, it also lets you take the outer skin off if you want. I find the skin on store bought peppers a little tough at times. - 4/10/13

    Good! Made this last night. I agree with some of the other comments about it being bland so I also added taco seasoning and some hot and mild taco sauce. Added a can of black beans to the leftover filling and plan to use that for tacos or burritos this week. - 1/9/13

    I recommend blanching the peppers before baking them and adding a little sauce on top then a dollar of goat cheese on top of each pepper! Yum - 1/8/13

    I steamed the peppers for 5 minutes to soften them first. I also added fresh thyme, rosemary and basil from my garden while cooking the meat.
    There was too much meat to stuff 4 peppers so I am saving it to make goulash another night.

    i changed it up a bit i used about 4 cloves of garlic,i made my own sauce from blended tomatoes and some fresh oregano,and a few spices. i also cooked them a bit longer to so they were nice and soft. asparagus was also a great side dish :) - 2/21/11

    This was a great recipe. I had a lot of stuffing left over, so I will probably use it for another dish. I enjoy vegetables so I add 2 cups of squash to the recipe and It turned out great. My boyfriend loved it, he can not wait untill I make it again - 2/10/10

    I love E A S Y recipes that taste great! This one allowed me to use leftover brown rice, leftover browned turkey Italian sausage, and a surplus of green bell peppers that I acquired through my CSA. The result was superb, and paired well with a nice Sangiovese I had on hand! - 1/19/10

    I have made these twice now. I used Rotel tomatoes, added a little cumin and a couple of Chipotle chilis in Adobo sauce finely chopped. Very spicy - very nice! My husband loves them and this recipe makes a lot. Will definately have them again and again. - 7/28/09
