Number of Servings: 4

Ingredients

    1 cup medium-grain rice
    1-1/2 tbsp vegetable oil
    1 clove garlic, chopped
    1 small onion, chopped
    1/2 cup bell pepper, chopped
    1 carrot, small, chopped
    1 slice turkey bacon, chopped
    1/2 cup celery, chopped
    1/2 cup, mushrooms, cooked and chopped
    1 tsp curry powder
    2 cups water

Directions

In a medium sauce pan under medium heat, saute' the turkey bacon until crisp, remove it and discard the fat.
Saute' garlic, onions, celery, and carrots for 2 minutes. Add rice and saute' it for 2 more minutes.
Add water, bell peppers and mushrooms with salt and curry powder.
Add 1 tbsp of oil and let cook uncovered until the water starts to evaporate.
Stir with a fork to make sure it is not sticking to the bottom of the pan and cover.
Cook for 20-25 minutes on low heat.
To serve, garnish with the bacon bites and voila!
If you like you can also cook it without the veggies, but with the onions, the garlic and the curry...it is really good. One of the favorites at home.
You can also can skip the bacon and if you feel more into the cooking thing, do it with brown long or medium rice.

    My husband and I liked it. He even said keep the recipe! I used Morningstar veggie bacon strips instead of the turkey bacon. I read the recipe wrong and ended up cooking the rice separate. But it still worked out and tasted good putting the rice in later. - 12/14/08

    Excellent! My DH and I both liked it. The turkey bacon adds a nice crunch and not too many extra calories. i will definitely serve this again.

    Delicous meal but drop the mushrooms. I do not put curry power in my rice, or rice in my curry; they have to be cooked seperate. I cook curry, chicken, curry beef and curry shrimp all with potato. - 6/3/10

    Very yummy! I changed it up a little bit since I didn't have all the ingredients on hand...left out the bacon, bell peppers and mushrooms, but used a stir-fry veggies along with the carrots and celery. Also used jasmine rice instead of regular. Turned out great!! The whole family loved it. - 5/21/10

    I found it to be rather bland, so I added another tsp of curry powder as well as some tumeric. I also nixed the bacon and added extra veggies. My fiance also said it needed more heat. I will definitely make it again, just with a few more revisions. - 8/22/14
